2 cloves garlic
1 tablespoon tomato paste
2 teaspoon paprika
1 teaspoon salt
1 teaspoon ground coriander
1/2 teaspoon sugar
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon cinnamon
1/2 teaspoon cumin
3 tablespoons oil
2 + 3/4 cups water

Big Thanks for saving me the time to watch and write this stuff down. They should have just posted it like most cooks do. BTW, looking at the list of spices, this seems more North African then Mediterranean, especially with the ginger, coriander and cinnamon.

Coming from someone who generally does not like eggplant, you made this look so appealing. The braising technique and those warm, earthy spices all came together with the herbs and yogurt to create an extremely appetizing looking dish. I will try to make this in the near future!

I can afford a $4 toothpaste tube of tomato paste... I just can't justify it. I buy a 40 cent can of tomato paste and put the remainder in a zip lock bag that I flatten out and stick in the freezer. I can break off as much as I need and return it to the freezer.

Made this tonight. It smelled heavenly, but the flavor fell flat for me and my family. It was puzzling. I salted and peppered it, but somewhere it lost the flavor. I think maybe my garlic was not fresh enough (I live in rural Appalachia - sometimes our produce seems pretty weathered by the time it reaches us). My other spices are fresh since I cook highly spiced recipes. Anyone else experience the same thing? How did you fix it?

given an option, I always use the long Japanese / Asian eggplants since I've never had an issue with them being bitter. Aubergines on the other hand....

A couple things about eggplant: Italian and grafiti eggplant have edible skin, regular doesn't. Also, male eggplant have much less seeds.
Agree with comments that took much longer than 15 min to reduce braising liquid. Texture of eggplant and skin was perfect. But was very bland.
Would be nice to have the soy and ginger version as well.
Add; 2-TbL. Lo Sodium Soy Sauce, & 2-TbL Sp. Crushed GarLic Last 10minutes😅
I made this last night. It was delicious, but too salty for my taste. I’m not a salt sensitive guy. I would cut the salt down to 3/4 of a teaspoon next time.
I followed the recipe and that is way too much water. I couldn’t get the braising liquid to reduce enough, even after 45 minutes of gentle boiling uncovered.

I like the general idea of this recipe, but that is a preposterous amount of water. We’ve tried it twice and had to reduce at least 15 minutes beyond the stated time.
Water iS Neccasary.
Took me a lot longer than 14-15 mins to reduce. Maybe I didn’t cook it aggressively enough in the first 15 mins.
Adding another 15 additional minutes and still it is not at glaze level....

WOW... Without the dairy yogurt, which can be substituted with some cashew cream, this dish is vegan.
The spices you have used don’t make it a Mediterranean inspired flavor but more of an Indian inspired flavor.
Each and every spice used along with the cilantro are Indian staples and are used in home cooking pretty much every day.
Either way, these warm spices complement the flat fleshy-ness of eggplants.
this sounds like the afghan preparation of eggplant: borani banjan.
Maybe start a vegan sub channel?
