Buona domenica! What's your favorite eggplant dish?
Moussaka.
Although I’m also fond of Ratatouille, Spaghetti alla norma, Parmaciana, Malanzane alla funghetti, etc…
Hello Eva and Harper, is the eggplant drained (salted) before using? Eggplant dessert, I am so confused. I will give it a try. Thank you
I have so many favorites ,on pasta but have say my Nona. caponata was amazing you literally lick your finger eating it with Bread yummmmmmmm
I thought the only way to wait eggplant was eggplant Parmesan. I have a recipe which takes all day, but we love it. It’s the only reason I ever grew eggplant.
Pasta alla Norma! 🍆🍝😋
Ciao Guys I am coming over to eat so get more eggplants
All the eggplants in the world! 😂
Sure would like to see your eggplant dishes too Vincenzo ❤️
Maybe not they use Barriila pasta which we all know you hate for some biological reasons 🙄Barrila pasta is PAR EXCELLENCE!!!!😊👌👌👌👌
What about Decco pastsa?
i havnt been here in a while, funny seeing you here brother 🇨🇦🍍🍕
I'm in Eva's Italian for Beginners class and one thing we learned is that she's a second generation teacher. Mama Rosa is a retired teacher and definitely passed on those skills to Eva. Our class also made the decision in our humble but accurate opinions that Eva is (more or less) the Italian version of Julia Child!
I ♥️ you!
@@tangoangel2782 With all due respect, you can compliment person A without comparing them to, or bashing person B.
@@tangoangel2782 Um. You're going a bit too far now.
The similarity would be Eva bringing REAL Italian food to the masses, versus the fake many in the U.S. know. Just like Julia did with French cooking. That plus the difficulty finding the same ingredients here in America that they have in Italy, as Julia did with French ingredients. There the similarity ends. Eva's recipes are far easier. Julia's recipes are much more difficult and time consuming in their combinations and specificity. The Anti-Chef channel does the series Jamie and Julia where he does Julia's 60's recipes from Mastering the art of French Cooking. There is no comparison as far as prep, time, and step by step accuracy. Eva's are far far easier.
Wait… she gives lessons??
Eva at the end - "I'm not a princess, I don't care."
Absolutely - you are the queen. Thanks for the fun cooking inspiration!
I'm searching the world over for a stunningly beautiful, 50-or-so year old Italian princess who can cook every bit as well as Eva. If you should happen to know of one, please put her in touch with me. I see many big days in our future. Grazzi! 😉
@@scottrowe533She must be stunningly beautiful? Well then you must be very handsome but more importantly loving & wise.
I think this may be the most majestic Eva's hair has ever been. Is it the eggplants? I choose to believe yes.
Eva should open an Italian bistro. She is professional. Every time i watch your food videos, i get mouthwatering for days until I try to find the dish or trying to imitate her dishes.....and never comes quite right. I rather go eat her Italian cuisine when she open her own restaurant... Seriously...... 💕
Yes Megg, I can see it now. 😋 “Eva’s authentic Italian Cusine”.
@@WinstonSmithGPT Yeah, I don't have any experience other than watching Kitchen Nightmares, but just that has taught me more than anything that the road to hell is paved with good intentions.
Eva would have to make sure everything works like a watch, and for instance, teaching the cooks how to cook and then asking them to do it alone for weeks is not the fun you have when cooking at home. She would NOT be able to cook for the guests herself. Ironic, I know.
But maybe she knows this;
IIRC, she loves MasterChef. Perhaps she's seen Kitchen Nightmares as well?
@@WinstonSmithGPT hillbillies no need to eat Eva's authentic Italian cuisine. 😂
Eva has to do at least 1 to 2 videos not on anything else but her hair, which is healthy, shiny, bouncy and AMAZINGLY gorgeous here !!!
Pasta water 🙃
Southern Italian locks always seem to be impossible to work with, but, strangely enough, never need too much work anyways 😂
Most of my family's isn't quite as curly as Eva's, but, I know for mine, as long as I keep it thoroughly shampooed and conditioned, I never have any issues with dryness, split ends, or knots (except for my beard, which for some reason, I need regular latherings of beard oil to actually keep it respectable)
@@davidm9612We wanted to hear from Eva.
Eva’s eggplant recipes have revolutionized the vegetable at our house. Brava Eva! 🥰🤗
I grew up eating a lot of vegetables, especially eggplant in the summer... so I am familiar with her dishes....caponata all the time.... different name.
I’ll drink to that! Same for me. 😊
I absolutely love eggplant dishes. But especially the way the Italians and the Chinese do them. When I traveled to Italy a while back, probably my favorite meal of the trip was also the simplest. Just grilled vegetables, including lots of eggplant, brushed with high quality EV olive oil and sprinkled with a kosher-style salt. Served with fresh baked Italian bread.
@@dolcemaddalena I'm sure there are countless Chinese eggplant dishes in China. But the one I love in the US is usually some kind of garlic or spicy garlic (sometimes called Red Cooked Eggplant). Especially when they use Asian eggplants which are smaller and more flavorful that the typical ones you get in the US. I do also like Eastern European eggplant dishes, which I imagine are similar to Turkish. Sadly, not a lot of those restaurants where I live.
@@norwegianblue2017 look up tortang talong its a filipino charcoal grilled eggplant omlette dish and its very delicious.
It's crystal clear: Eva arrived in Harper's life to simply save him. Mission accomplished ♥️
Except that he's selfish and rude to her. 😔
I think your channel is amazingly becoming a place where you share regional recipes from Italy, really interesting for Italians too 🇮🇹
Ah, as a past opera singer and current voice teacher, thank YOU for the reference of opera. Opera and good food are such a big part of Italy!! Grazie tanto!! Keep up the good work!!
Me and my wife toured Sicily for our honeymoon many years ago. We only ate bread and caponata because we couldn‘t afford anything more expensive 🤩😋
The last minutes are just pure gold. Eva mi fai morire, sei straordinaria. I'm hungry now, I want to eat pasta alla norma me too
“I’m not a princess so I don’t care” is my new motto in life 💖 Now that’s a t-shirt I neeeeeed!
Love, love, love Eva. She is so genuine. Go Eva
My Mom doesn't like eggplant so I made Eva's first recipe and she's changed her mind. Not only that, but she had seconds! I made a few alterations to the recipe, tho. Sorry, Eva! I used a few more cloves of garlic, chopped and left in, and I added a splash of white wine. It didn't suck at all! Thanks so much for the help. I was desperate for an idea for dinner tonight! Buon Natale, you two. Hope everything's going well there!
MAMA ROSA IS A CULINARY GENIUS. More recipes from Mama Rosa, please? Years ago, my Mama created her own cookbooks. She wrote out all her recipes and slid them into the plastic sleeves of photo albums so that she could keep them neat (one photo album each for fish, poultry, beef, breads, desserts...). Mama Rosa's recipes deserve to be preserved for posterity.
My father LOVES eggplant. I think he'd really like the first one shown. Need to try that one out for him. Fingers crossed - he's a 89 year old fussy man but love the eggplant!
I'm from Catania and this Pasta alla Norma is perfectly executed. 🍆🍝 Well done!
I'm from Catania as well, and you're damn right.
My Nonna is from Messina (the rest of my family is from Catania) and it looked pretty accurate to how she used to make it. Unfortunately I wasn't old enough to learn from her before the dementia really set in, so it makes me really happy to see such an accurate recipe for one of my favourite meals she used to make (which, coincidently was 2nd only to her caponata)
Simply, I love you guys. The passion when EVA is cooking is showing through all videos. Thank you guys
This is awesome because this year I'm getting an enormous amount of eggplant for my garden. I've had a lot of health issues lately so it's difficult for me to stand by the stove for any length of time. This looks awesome and easy and quick. I'm sure I can handle it. I have a refrigerator full of eggplants that need to be cooked and I'm so anxious to get to it. This video could not have come at a better time for me. Getting old sucks so anything I can do quickly is a gift. My legs are in rough shape from a recent fall so I'll be struggling but I know I can manage these quick and easy concoctions. I also think those desserts will be perfectly fine with my diabetes. As always I love you guys.
Love you guys so much. I feel like I am enjoying the food as you eat it. I have a large smile when I see you so excited with your meal. thanks so much for sharing with us you’re recipes and experience.
Eva these are such unique eggplant dishes, thank you for sharing the recipes! Harper you never fail to entertain us!
Caponata is one of our favorite dishes as well! Every household and restaurant have their version of this typical Sicilian sweet and savory dish! BRAVO!
I love eggplant and can't wait to try some of these dishes. Thank you Eva & Harper. The video quality & production is outstanding, it keeps maturing and getting better & better. Hats off to Harper!!!
Can't wait to try this amazing dish, you can tell Eva is very passionate about food ☺️ and her Italian heritage back around. Harper face always has Love the fact she's full of surprises ❤️
More eggplant recipes..I am so excited, I loved the first eggplant recipes …thanks so much
Great video on eggplants! I love eggplants! I am Sicilian so growing up we ate eggplants all the time! Harper and Eva, keep producing these great videos! 👏👍
Bravissimi amici! I have lost count of the number of times I have had Alla Norma in Sicily. I couldn't stop ordering it to see how each restaurant made it. 😊🤤 SO glad you left the last part of this video in for us to see. Watching Eva enjoy every last drop would have made my grandmother's whole holiday season. 😀🇮🇹❤🇺🇸 Benessere a voi!
Bravissimi! as always loved this. So authentic and I am so trying the now not secret original Mama Rosa’s recipe. And the Norma!
You two are just amazing! I LOVE eggplants 🍆 so thank you so much for the recipes!!!!
OMG! I made Mama Rosa’s eggplant tonight with fresh purple finger eggplant from my garden and they were so delicious! I could have eaten the entire bowl! This is my new favorite eggplant dish! Thank you Eva and Harper!
I actually found Italian eggplant ... just once 😔... and made this. Adding a few summer garden fresh tomatoes and a handful of kalamata olives and fresh basil made this really shine!! Hoping to find the Italian eggplant again before summer is gone. Thanks for a great recipe.
Lol as a math teacher I like your counting at the beginning… but seriously as always I loved the video. High quality, great recipes, and the great banter between both of you, who are each extremely likeable
I love any dish with eggplant 😍my nonna who passed away many years ago used to always make eggplant lasagna and I love it still to this day. I love all your recipes Eva, each dish looks so delicious.
I so fell in love with eggplant parmigiana I started making it with homemade sauce (thank you Eva) about every week. I even now have 2 eggplant bushes to have all fresh ingredients.
Buongiorno Eva and Harper. I love all your eggplant dishes can't wait to try them all. Looks very delicious. Eva is such a great person and a wonderful teacher on how to cook authentic Italiano food. Thank you for sharing this amazing video. Have a wonderful blessed day today!!! ❤️🥰🌹❤️
Yay, I LOVE eggplant!!💜💜 Thank you very much.💜💜
Your channel helps me relax. It’s a new home to go to. Thank you
I've always hated eggplant. My mom would cook it to absolute mush and it was like eating boogers. After discovering some eggplant dishes I actually like, I realized it was the preparation method. This video made me realize it wasn't just that, but it is also the variety of eggplant!!! I should try the smaller varieties.
I actually like mushy eggplant in baba ganoush, but otherwise it needs a bit of texture.
I just made the Rigatoni ala Norma. Thank you for helping me learn how to cook a good pasta sauce! I am always winging it with my tomatoes and it is hit or miss. So simple!
Today you came with another so delicious pasta. She is so talented and gifted and neaty I loved it. Thank you for the sharing
I don’t know if I’ll ever find a love for egg plant, but I was loving the music of the video. Reminds me of my childhood so very much. When I cook I listen and sing my most favorite arias.
Well she did it again she has the hands of a surgeon I am so blown away with some of her recipes I have made Italian food most of my life and she continues to show me real authentic food from the gods thank you both.
Eva, I asked you for a recipe for 'pasta alla Norma' - I thanked you then & again now.
A friend visited be maybe 6 weeks ago & I made it. She was overwhelmed just as Harper was.
One of the best dishes in the world!
Now it is part of ny repertoire- thanks to you.
Believe it or not, Caponata is another favourite of mine.
This week Eva you have been 'magnificamente meraviglioso'.
Grazie mille.
My family has been watching your videos. My 15 year old son is obsessed with Italian food thanks to your channel. He begged and pleaded to get eggplant to try some of these recipes. We made the Pasta alla Norma. I was skeptical but it was one of the best dishes I have ever eaten. Thank you for inspiring my family to try to new foods! Blessings to you both.
That's definitely 'the sound of happiness' - I savour those moments when I hear (and see) that 😉😋...Liccumie looks and sounds a winner too! 👍😃
I just made the first recipe . Oh boy its so good :) , will cook t again very soon . Thank you for the recipe its amazing !!
We just got through making the pasta alla Norma. Outstanding! All I can say is Thank You for sharing! Now on to the rest!
Eva, gurl, you RULE! This was a Hoot because I love eggplant dishes! Grazie!
And believe me the caponata is so much better the next day you wouldn't believe it I totally agree. I ate it over pasta and it was phenomenal!
Greetings from Costa Del Sol Spain. My husband and I love watching your channel! We get so many great ideas! We are doing keto, so I usually have to kind of modify them when I can. I made the Caponata di Melanzane. Delizioso!
Eva you are a gem! You have transformed my kitchen. I have made several of your dishes and they all turn out so good. My 2 toddlers love the dishes too...they know quality food when they taste it I guess 😅
But they also love McDonald's burgers and fries. 😉
I just love her! You make me smile! I need to go back to Italy!
At long last, today's soundtrack matches Eva's culinary skills which seems unlimited. Thank you to the both of you for this entertaining episode.
Lucky I like eggplant. More great ideas to try. Thanks
Just made the Pasta alla Norma, WOW!!! So good! I made it for an italian family as a first course. They loved it! They never had it.
Love the recipes and music selection, brava Eva!
God, Eva, the emotion in your voice when you inhale the scent of those peppers 🥰
Looks so good!
Amazing as always ❤
The use of raisins in the caponata is not something that comes naturally to many of us but it's got to be tried.
The liccumie would be a great followup to the caponata when eggplants are in abundance.
Finally, we all love our mamas but Eva's ability to step up and cater for sub standard ingredients to equal their versions is what elevates Eva to another level.
Great video, yet again, and many thanks for it.
Eva is such a cool cook.
No drama, just gets on and does it.
Of course she has every kitchen gagit imaginable, but I think she could cook just as well without them.
She is a totally awesome woman.
And her hair is glorious.
Love you two .
I make the spaghetti Al asasasina all the time since learning from Eva! Love it and I will try some of these recipes too ❤
My aunt made a similar desert using Castagna but they were fried and amazing. She gave me the recipe and I make them around Christmas.
My garden's eggplants are ripe, so this video comes at the right time! 💛🍝
Eggplant. My favorite. And the Radetzky March as background music! Caponata!
Yay! More eggplants! I have made every single one of the eggplant recipes from the first video, but I never post pics on Instagram. we eat them all too fast. lol
You never cease to amaze me.
Harper and Eva: Your videos just keep getting better and better! Ciao!!
Well worth the wait. Bravi!
So far we’ve made the caponata and the pasta allá norma. Amazing, the caponata was AMAZING!!!
Very good, I just picked some eggplants and I needed an inspiration to cook them.
I have to say I love the content but I also love the music choice very much! It captures perfectly the quintessence of the artistic trait of the Italian food. Bravo! 👏😍
I didn't know I was waiting for this sequence until I saw it! Thank you!
Like always ... Delicious 😋🤤
Thank you for sharing your eggplant recipe Eva I’m going to try to make the sweet one I usually cook the other tips of recipes I love the way you liked your plate at the end thank you Harper for leaving the video on god bless from Australia 🇦🇺
Well done! Bravo!
I just "Norma"ed my way all through Campania, and what a delight to come home and see your video!!! 🍽️🍽️🍽️
That final 30 seconds, with Eva scooping every last molecule off the plate, has me in tears. I only wish we’d seen more of her reaction when she’d learned the camera was still on.
I made your recipe for caponata and just couldn’t stop eating it. Delicious to the max
I got a Sicilian eggplant and some Indian eggplants yesterday so thank you guys for ideas on how to use them!!
Absolutely LOVE Pasta all Norma. Made Vincenzo's Plate variation. Making yours tonight 🙂
This is great. Thank you. I love a new channel.
Guys, I love eggplant and these are some classics that everybody should know so great job there. What I really love about your channel, though, is how familiar the food is for me since I am half Sicilian and half Calabrese! I grew up eating most of the recipes you have been doing lately.
Caponata is the best way to get all your veggies! I was on my way to the market to get everything to make it before the video popped up! Definitely the dish for the end of summer. Grazie! Norma and nerano anyone? 🍆🥒🥫
You are perfect and I learned a lot. Good luck dear Eva.
thanks for your recipe of Caponata, I am going to make it asap ! beautiful video : eggplants and Mozart !
Love this!!! I love eggplant anyway I can get it (when it's cooked right, that is!!). I opened my dutch-canadian boyfriend's eyes to how good it is! Next is to convince his mother. I think I'll definitely make at least two of these dishes to convince her how good it is! Thanks for the video!!
I am a better cook for my family because I watch Eva. I don't read the recipes, I watch what she does. My mother-in-law was Italian and a good cook and it's because it's not the recipes but the love you put in the cooking! Its the WAY they do it, the method. You add good fresh ingredients to love and boom! Fantastico
We had Eva's eggplant last night.
They ate as they said "Umm nom nom this is goooddd" 😋 happy tummies, happy family ❤ GRAZI EVA
Thumbs up your recipes are fun y exciting I am gonna try
Just incredible what beautiful recipes you share! I will totally try the Asian eggplants for Momma Rosa’s recipe - I loved Eva’s method, but now will get to the Asian-store. BTW - I just happen to be serving pasta baked in eggplant shells tonight - just amazing! Xoxo to you both!
I've been waiting so long to see your take on caponata 😍
Your recipe looks very similar to how my nonna used to make it (actually the closest I've found so far, except I think she may have used currants instead of sultanas) so I'm gonna definitely give it a try and cook some up for Christmas lunch
Thank you so much 🥰
Going to have to add eggplant to my grocery list this week... it all looks sooooo yummy❤️
go to a farmers market, they are in peak season if you are in america and will be far better than the grocery offerings !!!
1st Alla Norma 2nd Caponata , but I haven't yet tried the others!!! Bravi! I love eggplants!
So good! Made it for dinner tonight with eggplant fresh from the farm stand
Made the pasta ala Norma. Loved it and making it again.
Eva is awesome enjoying cooking. I will make this, just bought tons of mini eggplants at the market. Gracie mille. 🤘
I am not a pasta lover..I have never found a pasta that can make me have your reaction Harper ...Maybe one day I find that pasta place that makes me fall in love.......BUT I just adore you guys ..very lovely to see you both together..Thanks for all the videos. I always smile!
