I like being able to hear the blade running over the stone. I've notice there is a difference in sounds between stones. Some of them give me a headache, so being able to hear them is very nice!
Thanks for the wealth of information. I just ordered the sharpening set and look forward to bringing my block of J.A. Henckel knives back into use and throwing out the super sharp (when new) knives from Sam's Club. Alton Brown started my knife curiosity , Bob Cramer advanced it and you just put a finish on it. I'm hooked!
Great video! I know you can't make everyone happy, but hearing your opinion while sharpening is better than waiting until the summary. Thanks for the content and tutorials.
I Like YOUR Videos, because You explain what You are doing as You do it,That is how I learn the the fastest, Please don't change that!. If someone doesn't like it, They can turn off the sound themselves.
Really good to see a video with the sharpening and conclusion separated. It feels like it gives a more realistic view on the sharpening and stones when you show a true sharpening session. You get a better idea how fast they are, what they sound like, how often you have to wet them etc etc... Good video!
I'm an amateur "chef" who likes sharp knives. After wasting my $$$ on a Wicked Edge that put less of an edge than my 40 year old Lansky Sharpener, I have been on the fence about this Kramer Sharpening kit. Five minutes after watching your unboxing review, I purchased. Paid for this with the sale of that Wicked Edge and still have cash left over!! Thanks for this great video. I have enjoyed several of your other videos too.
If you can't put an edge on a knife with a wicked edge system then you are doing it wrong. Sharpening with a wicked edge is much easier than free hand sharpening but the system has some limitations on angle and size of the knife.
Respectfully. Why are you so surprised at the quality? Bob Kramer is a legend not only in knife-making but also in his ability to sharpen free hand. He never compromises quality. Have you seen the CZcams videos of him free hand sharpening? You and Bob should have a throwdown! Keep up the great videos!
Alextube search google for “kramer whetstone set” you can always buy direct from the zwilling website. Over here sur la table, cutlery and more, bed bath and beyond and amazon sells them too.
Hi Ryky, Again, another Great video! I bought the kit after watching Kramer say Chosera and hearing you talk so fondly of the brand. Found it on eBay for a discounted price and have never looked back. Thank you for all of your videos.
With the "buy right the first time" philosophy... This is my first set of stones. I was given a set of German knives by a relative who upgraded and added a Victorianox chefs knife and have been learning the ins and outs of sharpening on stones. I grew up with pocket knives and a ceramic steel, but it's taken me a while to get used to the muscle memory for stones. It took me a while to get there on my end, but the stones and the bridge don't seem to have ever been a problem. I can now get everything in the kitchen razor sharp. (Yesterday I bought a King KDS 1000/6000 for a friend, I imagine he'll be kind enough to let me try it out.) (:
Love the unboxing/demo. We are able to live vicariously without spending a cent. Thanks very much! I'd like to see the Zwilling 400 vs. the Naniwa chosera professional 400.
I just got into sharpening. I for a first time, put your video in front of me and mimicked your motion. I have to say I noticed that I had to start with a about a 300 grit to get that bur. I then moved to a 600 than 1200. That's all I had at start. The junk knives came out sharp not razor but did cut paper nicely. Thanks. I realize this is an older video. Hopefully I will hone my skill as well as my knifes.
I’m just starting out with stones. I have a small collection of pocket knives and multi tools. Nothing as fancy as your beautiful chef knives. I am afraid of damaging my more expensive knives so to start I purchased a 3 stone kit from Walmart... the stones are simply corse, medium and fine. Reviews I’ve seen on CZcams people are able to use the same kit to produce a nice edge (paper test, shaving). After watching a handful of your videos I’m feeling more confident. Wish me luck! As I improve I’ll upgrade to better quality stones. Last thing I’ll say is it’s frustrating. You make sharpening look so effortless. My first attempt had my wife laughing at me as my result was a blade dulled more then when I started.
There is something extremely soothing about watching you sharpening knives. I thought the silence was appropriate. Your gestures clearly conveyed all I needed to know at the time. Just an outstanding video/unboxing/demo. Much appreciated.
Based on the Kramer reputation and this video, I picked this up from C&M, along with the Kramer CS this weekend for 20% off. In comparing the equivalent Chosera stones and adding the necessary bridge to equal this kit, I found this kit to be less expensive by nearly $100. After many years of experience (and money wasted on cheap items), I too fall into the "buy right the first time" philosophy camp... Talking or not talking, I like all your videos the same. I learn a lot either way. Keep up the great work!
That's my project for this evening! I've never sharpened on a whetstone of any kind, so even though I've watched you do it several dozen times on many videos, I have to find and watch your beginner one again to make sure I do it right. Luckily, I have 10+ knives I don't care about to get it right. :D
UPDATE: So I finally got around to playing with the set. I watched the Kramer video, which is basically useless in comparison to what your provide. I started with my favorite lousy knife, an old 6" Wusthof chef's knife that was sharp as a spoon. The 400 got a LOT of material off, there was a LOT of dark slurry. I kept inspecting it with my 30x jeweler's loupe and it did not seem as if I was able to get a burr at all. After 10 minutes, I moved on on to the 1,000 and worked on that for about 10 minutes as well. It seems like that would be too much time, but I was concentrating on technique, angle and trying to use the whole stone since it was my first try. The 1,000 also got a lot of material off and I still could not find a discernible burr. The 5,000 is now permanently marked by all the material it took off. I used it for about 5 minutes and stropped with it to finish up. The outcome is a MUCH sharper knife that cuts A LOT better. It even cuts paper, but not cleanly or smoothly at all. I am certain this is operator inadequacy and not related to the stones. I am happy with the set, the stones are perfect and the stand is stable. Now if I could only find a hands-on class to be able to get feedback on technique, I'd be golden. Thanks again Ryky.
This video is 3 years old. Remember watch it before go and buy my kramer whetstone kit. So saying that its been 3 years using this kit for sharpening my wusthof pro knives that use daily in my work (BBQ pitmaster) and my home knives that are more walmart knives. and the stones are still smooth and flat as the day 1.
When I first saw this sharpening set, I was super pumped toward buying it; then, I saw the 300 dollar price tag! I winded up buying a King KDS. Even though I prefer a splash and go, you can't go wrong for 45 bucks.
I really appreciate that you don’t speak during the sharpening process. It allows the viewer to listen and recognize the different characteristics of the stones. Acoustic feedback is an important element of the sharpening process and one that’s not recognized enough. Yes- tactile feedback is critical but your ear can also tell you how things are going. Stay Safe and Stay Strong, Boston
So I bought the Kramer water bridge and cleaning stone and the stones you recommended the King 300, King 1000, and Suihero 5000 grit on Amazon.for a total of $188 waaay cheaper than the $300 Kramer/Zwilling kit
My brother gave me a Kramer 1000x stone and I recently (11 months ago) got into Traditional WetShaving and thinking about going to straight razors . This will work if I also get a few higher grit stones.????
FWIW to me the 1k Chocera is the gold standard for Nakato stones! I prefer the softer feel of the Chocera stones vs the Shapton Pro or Glass. That said the 320 Shapton Pro is one of my favorite Arato stones. The Chocera 10k is probably the best synthetic Shiageto I have ever used. If I could only have one stone for everything I could probably survive with just the 1k Chocera (although that would suck as I have at least 60 synthetic and over a dozen natural!). Weird to have a single Nugura stone for all of them! Each grit should have its own Tomo Nugura IMO.
Does that knife have a scandi grind on it? I have a newer Dalstrong that is a flat grind and its excellent but that looks a lot like it has a scandi grind on it that they tried to hide with the hammer marks.
Seeing you cut through the paper makes me realise how dull my “sharp” knives are. I use dads chisel stone which is appx 1000 grit and 3000.. however it has a massive hollow out of the middle and I struggle to get sharp edges as the knives cut into the stone
Usage after unboxing is defiantly appreciated. You may even think you'll get to do a full video on them soon ... but we all know that with such a big collection it may take a while to get to every one of those. p.s. gotto get on your j-nat collection now :p
Gotta saw its a completely different experience watching one of your videos with only the sound of knifes sharpening and cutting. Feels like im meditating or something
FANTASTIC VIDEO! Answered alot of questions about the kit mainly is it worth buying. I will purchase this bad boy soon. As far as your stone is concerned which of your collection do you feel is the VERY BEST? put that against the kramer stone and lets see who wins.. :)
Great demo Burrfection of this kit. I ordered one and yes, I like DVD's! LOL. Will take time to watch it. Your information on knives is very valuable. I won primarily Shun and also Victorinox, Wufstof, and Mercer. My question is, in sharpening the European knives, do you recommend the whetstone or use of an electric sharpener? Thanks!!
Your channel but I would talk. What you have to say isn't just filler, I appreciate the commentary as you go.My King 4,000 loads up crazy fast. It is a combo stone for what its worth.
@Burrfection would you consider doing a video where you show off how some knives with really different blade profiles perform cutting different things? Like an onion, meat, and a leafy herb. I think it would be cool to get your opinion on some of the different styles!
are the Zwilling whetstones closer to the Naniwa Chosera/Pro or to the Naniwa Super Stones? I know Bob Kramer has made a reference to Chosera custom making them but some user comments do not seem to align to that reference by BK. Any feedback from actual users would be really helpful in helping me make a decision.
I really want to see your side by side comparison of these stones against the very best other synthetic stones that exist, mainly Choseras. I do believe, from experience with MANY different, that - as far as synthetic stones go - in sole terms of speed and final edge performance (leaving feeling and other factors aside) these - Chosera Glass Stones - are the very best synthetic stones that currently exist in the world. Of course, they still can’t beat the unique type of polish and final aesthetic of natural stones, though... but, again, for final edge performance versus time spent sharpening ratio alone: you just can’t beat the Naniwa Chosera Glass stones (branded Kramer stones by Zwilling), not even with diamond stones of any kind, Cerax, Shaptons, regular Choseras... these are faster and deliver a final better performance from my experience, regular Choseras coming very close only.
I want to build also a sharpening kit and I’ve ordered a 1000 and 5000 stone. The seller didn’t have the 5000 stone and sent me a 8000 stone instead. Do you think I can go with the 8000 or should I return it? Thanks?
Your demo video is so excellent, and I learn a lot from you. Thank you very much. Besides, would you teach how to sharpen the knife to cut a hair easily ? I do my best to sharpen my knife, but I never arrive the goal. Thanks.
Great video. You would think with a high quality set like this they would at least include a storage case of some sort to keep it together. But otherwise this set looks like a good investment.
Ryky, I am going to go to the Hamono Festival in Seki City in October 2022. A date hasn't been set this far out, yet. But, I will be in either Kyoto or Osaka in early and mid-October and want to go to the festival. What should I look for? Will there be the "big name" (Miyabi) knives there? Or, will there only be very obscure "boutique" knives that I won't know? Or, will there be everything? I have read that the prices of knives at this festival are fantastic. I want to bring a knife home, or have it shipped, but I don't want to spend over 200 USD. What should I look for? Thanks, from a long time subscriber.
Constantinos Antoniades Get a really flat piece of floor tile or a chunk of stone countertop and get some good quality sandpaper. It’s cheaper to get into it and it works pretty well. A lot of woodworkers use that. Look up “Scary Sharp”; plenty of videos here on YT. P.S., you can find PSA backed sandpaper too. 3M makes superfine grits with PSA backing.
Golly check out the DVD. Kramer has made some nice videos... perhaps there are some good ones in it. A local kitchen shop has a service sharpening with these and they are NICE stones. It pays to have someone hone your knives if you do not do it often yourself. As always a cutting board is a a better investment if you have a local sharpening service. Those without a diamond flattening hone might just use the stones themselves to condition the surface flat. Take the coarse and worry the next hone smooth then the next then then the next. The top stone will tend to be concave so alternate top and bottom. The advantage is the surface of the hone will not have deep tracks and scratches that get in the way of the grit level.
I can't find it in the channel, but what's the idea behind the glass stones? My assumption that the glass provides a strong base for the whetstone, sou you can use practically all of it, while if it is a whole whetstone brick, you won't be able to use the last several mm because of the stone's integrity, stone holders are in the way, etc. Also, glass is cheaper than the whetstone, so it would make the hole thing cheaper. Am I correct here? :D

I never thought I'd live to see the day I was visibly excited over a new whetstone video. Thanks again for all your videos and lessons.
haha. welcome and stay in touch
Talking or not talking, do as you like. Personally I enjoy you talking about the stone feel etc while you are sharpening. Good video as usual.
thanks for the input!

thanks MIZZ!
You get into this zone when you begin to sharpen the knives. Awesome

what?!?! wow!! really??

Thank you for the information you share. Great videos very informative. Looking forward to see more.
It was nice hearing the difference between the stones
Thanks for reviewing this, I added this to my want list moons ago and got it from my wife this for Christmas, awesome set!
How did she get this exactly? I can't find any traces of this set in europe but I'm probably to stupid to google this correctly
Alextube search google for “kramer whetstone set” you can always buy direct from the zwilling website. Over here sur la table, cutlery and more, bed bath and beyond and amazon sells them too.
Great video and informative. I've been thinking about getting this set for a starter kit for my kitchen knives.
Great video Thanks for sharing! I have that same kit....Love it!
Very nice video! A lot of good info packed into that video. Unboxing, sharpening and review all in one!!!
right on
Hi Ryky,
Again, another Great video!
I bought the kit after watching Kramer say Chosera and hearing you talk so fondly of the brand.

hahah. i love it.
Nice review! Finally a new video!
Hi Ricky please keep talking in all your videos please it is needed for myself and you describe what your doing extremely well thanks Dean
thanks Dean! doing my best.
Love the unboxing/demo. We are able to live vicariously without spending a cent. Thanks very much!
I'd like to see the Zwilling 400 vs. the Naniwa chosera professional 400.
hahah. you got it. that video will come soon
No talking is awesome. I can hear everything on the blade and stone. So good. Relaxing
thanks for teaching me how to sharpen a proper knife.
I just got into sharpening. I for a first time, put your video in front of me and mimicked your motion. I have to say I noticed that I had to start with a about a 300 grit to get that bur. I agree. Then you'll have plenty extra to purchase a few nice knives.
Price went up to $400. I'm just getting into nice knifes and whetstones and looking at price history most things went up in price.
I really appreciate that you don’t speak during the sharpening process. It allows the viewer to listen and recognize the different characteristics of the stones. Acoustic feedback is an important element of the sharpening process and one that’s not recognized enough. Yes- tactile feedback is critical but your ear can also tell you how things are going.

thank you for the feedback, i'll remember that

Hoi iedereen.
Ik heb veel geleerd over het slijpen van messen. Bedankt voor je info.
Groetjes,

Great video ! How are you liking the sink bridge in comparison to the naniwa sink bridge ?
So I bought the Kramer water bridge and cleaning stone and the stones you recommended the King 300, King 1000, and Suihero 5000 grit on Amazon.for a total of $188 waaay cheaper than the $300 Kramer/Zwilling kit
Definitely following this and what you think on this set. Great job on all your videos
Glad you like them!
Thank you sensei....
good to hear from you, Ahmad!
My brother gave me a Kramer 1000x stone and I recently (11 months ago) got into Traditional WetShaving and thinking about going to straight razors . This will work if I also get a few higher grit stones.????
Good info.
Would love to try the set with their leather hone. To bad its so damn costly.
Great video as always keep up the good work ryky 😁
Cool, Very cool!
LOVE to see the SHAPTON 16,000 and SHAPTON 30,000 stones perform….SO WOULD…LOTS….OF US !!!!!! L 👍👍
I need a good shaping stone or something to reestablish an angle what would be good
How are you not rounding off the tip by dragging it off the stone with each pass?
Hi, Ryky: did you ever get a chance to review the 3,000 and 10,000 grit stones in this set by Bob Kramer? Thanks.
Has the Glass Part any use ?
What knife are you sharpening in this video?
finaly :) very good review ...... good video
just doing my best.
You may even think you'll get to do a full video on them soon ... but we all know that with such a big collection it may take a while to get to every one of those.
p.s. gotto get on your j-nat collection now :p
i'll see what i can do
Sergiy Gonchar i second a jnat ,maybe even coticule , review/s
Great video. Do you need to flatten these stones after repeated use?
not if you move your knife around the sides and edges while sharpening.
Do you know if the Shapton Glass or Professional cases will fit these stones? I'm disappointed that cases aren't included in the kit...
Is this better than the Shapton glass stones?
Gotta saw its a completely different experience watching one of your videos with only the sound of knifes sharpening and cutting.
Feels like im meditating or something
Keep doing what your doing. Changing what your doing will only alienate your fan base.
thanks, for the advice
FANTASTIC VIDEO! Answered alot of questions about the kit mainly is it worth buying. I will purchase this bad boy soon. As far as your stone is concerned which of your collection do you feel is the VERY BEST? put that against the kramer stone and lets see who wins.. :)
Great demo Burrfection of this kit. I ordered one and yes, I like DVD's! LOL. Will take time to watch it. Your information on knives is very valuable. if you are asking what i use personally, i use whetstones. for everyone else who doesn't have the time or patience, an electric sharpening is fine.
Your channel but I would talk. What you have to say isn't just filler, I appreciate the commentary as you go.My King 4,000 loads up crazy fast. It is a combo stone for what its worth.
thanks David!
@Burrfection would you consider doing a video where you show off how some knives with really different blade profiles perform cutting different things? Like an onion, meat, and a leafy herb. I think it would be cool to get your opinion on some of the different styles!
yeah, i'm trying to do at least 1 cut demo with a knife once a week. basically, my preparing my dog food, or food for dinner.
are the Zwilling whetstones closer to the Naniwa Chosera/Pro or to the Naniwa Super Stones? I know Bob Kramer has made a reference to Chosera custom making them but some user comments do not seem to align to that reference by BK. Any feedback from actual users would be really helpful in helping me make a decision.
Hi, could you tell me what the size of the Kramer Stones is please? Thanks for a good video! Mathias
What is your favorite wet stone sets. Medium price to expensive. I'd like to have a water trough with my set. Also where can I find these.
I really want to see your side by side comparison of these stones against the very best other synthetic stones that exist, mainly Choseras. Nice stone i wish theres a give away set sharpening stone hopeng 😂🤣😂 and have a good day always
nice job.
Luv it…..Papergasm.
Spends life perfecting knife sharpening skills. Flummoxed by cardboard and cellophane packaging. : ]
I want to build also a sharpening kit and I’ve ordered a 1000 and 5000 stone. The seller didn’t have the 5000 stone and sent me a 8000 stone instead. Do you think I can go with the 8000 or should I return it? Thanks?
Have you heard of the Wicked Edge? Thats what I have to sharpen all my pocket knives, do you think its good for kitchen knives? Let me know thanks!
Right out of the gate when you started sharpening on the 400 I thought that it didn't sound right it seemed to be not course enough
Hello. How Mitch pressure are you placing on the knife (a little or a lot)? Also, are you applying the pressure in both directions or only in one?
very little. only on edge trailing strokes. maybe this video will help czcams.com/video/o4XgLgvqjYk/video.html
Why are the strokes pulled toward you at ‘a 30 or so degree and the stroke;s away from you at 15 or so degrees?
I bought it today, let’s see what it can do! Thanks!
how do you like it 2 years later ? I'm waiting for my set.
Brigita S it’s awesome, very fast sharpening, but remember that you need to have the sharpening skills to them to do the work.
Seeing that this is a kit would you say it would be good for your first stones or is their a better kit you've seen?
haha. i always suggest getting what you can afford, so if you can afford these, yeah, go for it.
Have you seen the Tojiro Pro sink bridge? it looks like it is more stable
New to your channel. 1. Do you strop? 2. Isn't newspaper a better (more difficult) test medium? Very relaxing!
So I was watching Bob Kramer using the sharpening kit and he stated that the stones were made by Chosera for Zwilling
Would you always recommend starting with 400 grit and working up?
only if your knife is very dull. most of the time, starting off at 1000 is perfectly fine
Agree the extra Stones you mention as well as a rubber based base/bridge would have been more app in the kit.
yeah, i hear you. people are already paying good money for the kit and would not mind paying a bit more for a more complete set
Your demo video is so excellent, and I learn a lot from you. Thank you very much. Besides, would you teach how to sharpen the knife to cut a hair easily ? I do my best to sharpen my knife, but I never arrive the goal. Thanks.
i'm not good at cutting hair
It's all right, and thank you for your reply. Your video is still very good, and I like them so much.
What knife are you sharpening?
Tried lapping on the glass backer?
Great video. You would think with a high quality set like this they would at least include a storage case of some sort to keep it together. But otherwise this set looks like a good investment.
a case would have been nice!
Can you make like a stone kit which you would make, so from 400 - 5000 or 6000, which of the stones would be in the kit. Great video.
sure. will make it soon
So can you use this for all knives like pocket knives or just kitchen knives?
yes, they they will work for all knives.
I am trying to sharpen my knives with cheap stones from ebay and I find it very difficult. Please give suggestions of the best stones under £10
Constantinos Antoniades
Get a really flat piece of floor tile or a chunk of stone countertop and get some good quality sandpaper. It’s cheaper to get into it and it works pretty well. A lot of woodworkers use that. Look up “Scary Sharp”; plenty of videos here on YT.
P.S., you can find PSA backed sandpaper too. 3M makes superfine grits with PSA backing.
That Shogun Series X is my daily driver...And it makes me sad whenever you whip out that brick 😂.
seems like a great kit from Kramer. Do a giveaway....for ME :-)
Golly check out the DVD.
The advantage is the surface of the hone will not have deep tracks and scratches
that get in the way of the grit level.
thanks for the advice, nifty!
Great video. I love the three angle view. Do u purchase the 10,000? What is it used for?
i DID..... but.... seldom used it. i rarely go above 3K for my personal knives. 10K for mirror polishing on certain knives.
@@Burrfection So the 10,000 is $200 vs the.stropping option :$60. What is the difference 🤔
glass can be molded very flat and it does not warp and can be tempered to be relatively hard but not brittle
I would like to see the names of the Best different glass company kits of stones.
