Louisiana Chicken Cooked On The Weber Pulse 2000 Electric BBQ

  • If anyone is scared of cooking chicken from raw on the BBQ then this video shows you that it doesn't have to be raw on the inside and burnt on the outside; it's just a case of managing the heat on the grill. This video used the Weber Pulse 2000 electric BBQ which has an in-built iGrill; this ensures that the chicken comes off at exactly the correct temperature. This can just as easily be cooked over gas or charcoal and you can use wings or thighs instead of the breasts that we used in this recipe. If you like your chicken fiery then just double the quantities of paprika, cayenne and the chilli ginger sauce.
    Take the chicken breasts out of the fridge about 30 minutes before cooking as they cook quicker and more evenly at room temperature. Use this time to marinate the chicken in the dry rub ingredients. This recipe also calls for a flavoured wood smoke, we use the Weber Smoker Box, which would normally go over the Flavorizer bars on your gas BBQ. The hickory chips were first soaked for 20 minutes beforehand and placed on the BBQ about 10 minutes before the cook started.
    The grill was set up with the element underneath the smoker box on full and the other element about two thirds on. The chicken was placed over the lower temperature and the iGrill probes placed in the front and back pieces. Once the temperature hit the low 60'sC the smoker box was removed and the chicken placed over the direct high heat and basted with the BBQ sauce mixture. Once the first side had reduced down and gone sticky the chicken was turned over and basted on the second side.
    When the chicken reaches the cooked temperature both the Pulse and the iGrill app will alert you that it needs to be taken off. Leave it to rest wrapped in tinfoil for about 10 minutes before carving.
