Sean if you ever have a surplus of honey, try using that as part of the sugar quantity. It should work. I make marmalade and jam myself from time to time. Seville oranges aren’t always easy to get. You might like to try making Lime Marmalade, the only problem is the colour of the finished product, it’s a bit of a muddy green colour, it tastes ok but it’s not the same green as Roses.

A few years ago I tried making spiced orange jam. It made a delicious sauce but never set into jam. I'm inspired to try again, this time cooking it with the peel. I enjoyed watching you make the marmalade. K from Canada

You chaps have an amazing work rate. You get so much done, what with the honey, running the croft, keeping the hens and looking after Sherlock, making the videos and so much more. I don't know how you keep it up.

Thanks for making this video, it was lovely to watch. I use the recipe my mother got from a magazine once sugar came off ration. It takes 3 days but most of that is 'cover and leave overnight to soak'. I'm not fastidious about cutting and de-pithing, but then neither was the recipe. I usually make a year's worth of Seville Orange Marmalade in January in 2 batches, 1kg of oranges at a time. I've made 3 ingredient Marmalade once, when I couldn't find any Sevilles for a second batch. The sugar proportion was much more in the more modern recipe, even though using sweet oranges and grapefruit. A couple of limes couldn't make it that bitter! It still had 2 lemons to a kilo of other citrus. I prepared the quantity of sugar in the new recipe, weighed what I would have used (2kgs for 1kg of Sevilles), added most of that, then added to my taste. Of course it was pretty similar and I couldn’t tell it was mainly grapefruit! Useful to make other types as I find so few shops near me even know what a Seville orange is! Fabulous video, thank you.😋

I said it then and I'll say it now I would love to either see some videos or perhaps a cookbook with some of Shaun's cooking.
I’m not keen on cooking videos, normally the marmalade would take about 3 hours…. Filming that took all day 🤣🤣

Many years ago I made Three Fruits Marmalade (Orange, Lemon and Grapefruit), which was lovely. It is slightly more 'tangy' than plain Orange Marmalade but is fabulous on a piece of hot buttered toast. You have inspired me to get the big preserving pan out and make another batch.

Very entertaining and informative. I really enjoyed this because I cannot cook at all. My late Aunt used to do this every year with whatever fruit was in season. It was something of a tradition in Scotland. Keep well and safe. James.

I loved this video and Colin's questions for Shaun while he was making the marmalade. For many who are familiar with cooking, that may have seemed simplistic, but for someone like me that uses my oven for storage and can only boil a bit of pasta, those questions and Shaun's answers were very beneficial. I will have to just book a flight in the fall, pop over, buy a few bottles, a quick hello then come back again :)

1. Host a dinner party and charge so much a plate. Heard of a fireball that did this. Set up was on a covered bridge and only a very limited amount of tickets were sold.

Funny thing is... I had sat down with a sweet navel orange hazy IPA (Urbanaut, NZ, Citrus 6 pack hazy IPA's for anyone playing along at home) and the more I watched... the more my hazy IPA started tasting like the delicious marmalade I was watching being made!
