FRIGGIONE, the Italian Onion Spread + How to Dye with Onion Skins!! [SO COOL!]

  • Hi everyone! This video was a fun video to make -- a combination of a recipe video and vlogging, a bit shot in Italy and a bit shot in the USA. Overall DELICIOUS and so much fun getting crafty with onion skins! Hope you enjoy it.

    TO MAKE FRIGGIONE:
    -thinly slice 2.5 kg (5.5 lbs) of white or yellow onions
    -toss onions in a large bowl with 1 tsp salt and 1 tsp sugar
    -let sit for 4 hours, stirring occasionally
    -put onions in a pot on the stove over low heat and cook for 2 hours
    -add 200 grams (3/4 cup) canned tomatoes, and stir
    -cook for another 30 minutes
    TO DYE CLOTH USING ONION SKINS:
    -rinse onion skins
    -fill a pot of water ¾ full
    -put over heat and once it’s warm but before it simmers, add the onion skins. -leave the onion skins here for 1.5 hours, with the heat on low...it shouldn’t be boiling, but you should be able to see some steam coming off it.
    -soak the fabric you want to dye in water for 1-2 hours.
    -strain the onion skins -- I’m not too detailed about this, you can use a cheesecloth if you are.
    -ring your soaking fabric and add it to the onion skin water, stir in until fully immersed.
    -let soak over a low heat for 2 hours.
    -turn off the heat and let sit overnight.
    -the next day remove it from the pot and squeeze the excess liquid from it, and hang to dry. Voilà!

    Nice looking friggione! It is a fine addition to all the "bready" stuff that we have here in Bologna (tigelle, crescenta, crescentine, piada, ...). But my favorite way to eat it is with polenta (any kind of polenta: soft, baked, fried, ...).

    There's a pizzeria in Maggi (close to Bologna) which makes pizza with friggione. Guilty pleasure at it's finest.

    Fantastico! I’ve also used avocado pits/seeds they make a pretty pink and if you have a bad or cheap red wine that’s good too! You know the kind you bring your plastic container in and fill! And turmeric beautiful gold! Have fun! Best tip :was making the pancake out of your sourdough starter throw off! Brilliant! Also I’ve made patterns from leaves and flowers and a mordant! They come out beautiful!

      I need to try using avocado pits!! I've heard of that one but never tried it. And the turmeric!! I need to get my hands on some mordant and experiment with that ... it's next up! :)

    I had no idea you could cook the sourdough discard... Do you mix it with anything else, or just cook it straight from the pot? I'm glad you're highlighting friggione. It's not found that often in touristy places in Bologna, it's more of an insider's dish! :)

    Ci sei quasi...vanno usate le cipolle bianche, più dolci, si lasciano a macerare un paio d'ore con sale e zucchero poi si cuociono a fuoco bassissimo per 2 ore (ma ci andrebbe anche un po' di strutto). A questo punto si aggiungono circa 300 gr di pomodori pelati e poi si cuoce per un'altra ora e mezza. Solo così diventa una crema, tipica del friggione. Riprova.

      Ho fatto tutto questo, tranne le cipolle bianche, ho usato le cipolle gialle. Riproverò con le cipolle bianche per assaggiare il sapore più dolce. Grazie.
