    My must haves are cumin, garam masala, coriander and paprika. As a general rule, the stronger the flavour of the food you are cooking, the stronger the spices you can use on it. So goat, beef, mutton, pork, matumbo can all 'take the heat' so to speak, while chicken, beans, lentils, vegetables, fish have milder flavours, so don't use strong smelling spices on them or it will ruin their taste.

    All these spices are a must have. They make your meals taste so good. My favs are paprika, cumin, cardamon, curry powder... aha! almost all. I love them in my food.

    Great as always,would be nice to hear thoughts on pairing spices for different dishes or is itbest to use one at a time?…like would you use both tumeric and paprika at the same time?

    Thank you soooo much for this video ! For a long time (too long) I have wanted to know how to use spices i.e. which ones to use ! you have shown which ones to use in various dishes and this information is invaluable for a 'spice beginner'.
    So many bloggers when giving recipes just say 'add spices of your choice' - !!! I click away then because I don't know which ones to use.
    This information will transform my cooking

    Aniseed is definitely one you should add. It's great for marinatung meats, chicken, fish. Star anise gives a similar effect as aniseed but works best whole fried in your oil b4 u start adding other ingredients

    In my house I can't miss curry powder, black pepper,pilau masala,cloves & cardamon. The others in your list I use them but I don't why I forget. Btw 🤔🤔🤔have never used chilly flakes

      For cadamon you use your mortar pestle the seed will separate from the outer skin. The seeds you use for your dishes, while the skin you can put it in your tea leaves as you make tea. It gives your tea a wonderful taste and aroma. Just try it. Ngina.
