Davis Gaines is one of the most brilliantly gifted, humble and extremely kind performing artists I've ever met!
As the Phantom, he haunted the role in a very classic, gothic, early Hollywood (1920's to 1930's) horror movie style... from his gait and gestures to his vocal characterization and enunciation, his Phantom was hypnotic, seductive (almost vampiric! )... simply genius!

The song is Can't Help Lovin' Dat Man from Show Boat. There was a new production of Show Boat directed by the high-fiving guy, Hal Prince, in that year. The company changed a line in this song to “can’t help loving the Hal of mine”. That’s why he was laughing.
Wasn't Andrew Lloyd Webber the one who created the musical version of the book? Yes, he was. They also performed this number at Andrew's Kennedy Center Honors in 2006, he's the one who wrote and composed the music.

The original was a while ago, way before the movie. Michael Crawford as the Phantom and Sarah brightman as Christine. the original was on Broadway.
