Hi. Would I be correct in saying that the backlash should be as little as possible while still existing?

That's spot on. As soon as there is zero backlash or "play", the gears will wear experience excessive amounts of friction and will heat up and strip very quickly, likewise, too much backlash or "play" will cause the gears to slap together with more force, and create less over-all contact area for the teeth which will drastically increase the chance of stripping teeth.

I have a HSP Storm and have been through 3 gears and and a pinion gear in just a month. I am trying to replace my pinion gear but I can't undo the grub screw. I tried heating it up with a hairdryer and usuing silicone spray and even prying the pinion gear off with a screwdriver but I just can't seem to get the pinion gear off or even take the grub screw out of it. What do i do?

Hairdryer does not create enough heat. You can find really affordable soldering station + heat gun combos on Banggood. I've had mine for a year now and no problems. It costed like 30 USD. Heat gun gets up to 400 degrees Celsius.
