right? so often these recipes look SUPER cool and SUPER fun and SUPER out of my league (especially the anime with alvin recipes since they so often involve homemade broths and atypical cookware), but this one seems totally doable!

Alvin should do an episode on any of the Yuru Camp dishes. The second season especially has some really neat ideas.
My fave thing to do at hotpot restaurant is not get soup refills, let my broth reduce, and the last thing I eat is some ramen/udon in the super concentrated broth.

When using earthware wouldn’t you be able to treat it kinda like cast iron?
I bet the difference is less about what it's made out of than what it's used for - I feel like you usually see donabe used for boiling, steaming, simmering. You can certainly boil in cast iron but I usually see it used for frying.
