Picanha is a wonderful cut of beef, tasty and tender. Best of all, it costs less than half the price of a ribeye or porterhouse steak. It's perfect for the carnivore diet.

I am a former tech worker who lived in NYC for 30 years. At 50, I started an Amazon FBA business. Fun, but neither career allowed time for healthy living.
Last year, I turned 60, overweight, out-of-shape, pre-diabetic, with high cholesterol, and couldn't walk 20 minutes without resting.
In August 2023, I began the carnivore diet. I lost 65 pounds in 3 months.
Now, I can walk for miles without a rest. My cholesterol and blood pressure are at healthy levels, and I am no longer pre-diabetic. I feel 30 years younger, and I'm passionate about sharing my story to help others.

Great video! I've recently been purchasing my meats from a nearby Brazilian/Portuguese market nearby. good quality meat and great prices too! I know the area you're in as I used to live there, check out Newington Meat Market and some specialty markets that are near you! I also use a car fridge/freezer for those longer trips when I go to Costco almost 1 hour away!

Thanks Jay, I enjoy all your videos. I have had the Sirloin Cap in the past, but not lately, so I am going to look out for it next time I do my shopping. I found a different Supermarket recently that sells at better prices than most of the others, and I am really enjoying the high quality beef they sell. I hope you try the bacon for snacks. I just bought more of the thick-sliced bacon that I find so great for the snacks.
They don’t have that thick bacon here in the US. I was buying it all the time in Toronto and I loved it!

We eat picanha weekly. If you want to make steaks, cut the steaks with the grain, then cook. Then cut against the grain as you eat it. It’ll be more tender. We smoke the whole picanha to 120 then sear the fat cap on a cast iron skillet. It’s amazing.
I’ll try cutting them that way next time. It was pretty tender the way I did it, but the tenderer the better!

Picanha has become my mainstay: I’m almost a carnivore now (huge help after over 50 years as a type 1 [insulin-dependent] diabetic). I find that I need to give it a much longer sous-vide cook than recommended, sometimes as much as 24 hours, to guarantee tenderness. I buy it with the full fat cap whenever I can and I eat all of the fat: that took some getting used to after a lifetime of being told to cut off and discard the fat, but now it seems almost normal, almost.
I’ll have to try it sous-vide, I’ll bet it’s delicious!

You might be able to find that top sirloin cap in a Brazilian or Portuguese grocery store. I know that they have a few of those in Toronto, although they may be hard to get to from wherever you live. Be sure to ask for the cut in Portuguese - picanha (pronounced “picanya”).

I’ve done several videos like that, but none recently so I think I’ll do another soon. None of that stuff bothers me as much as it used to, but it was surprising how other people reacted when I first started.

First cut with grain, then grill. This way when you cut bite size pieces those will be across the grain making it more tender. Check out guga foods I get a ton of great ideas from his channel.

Okay, that looks amazing! Love how fatty it is. Fatty and bone-in cuts have more flavor IMHO. The price can't be beat. I've never seen that particular cut before, but we don't have a Costco where I am so maybe that's why 🤷🏼♀️. Dumb question, Jay. Have you had an eye exam since becoming carnivore? I recently had one and, to my utter astonishment, my vision has actually improved in both eyes since my last exam two years ago, and the small cataract I had in one eye has vanished. I'm wondering if you've experienced improved vision as well? The carnivore diet is so healing, I can't help but think it has made a difference in my eye health and vision. I could be all wrong but nothing else makes sense. And, yes, I know I should have my eyes checked annually but I kinda forgot last year. I've worn glasses or contacts since age 7 and this is the first time I've had improvement. Bit shocking TBH.
I had an eye exam last year right before I started the diet. My vision hasn’t gotten any worse for the past five years, but I cant say whether it has improved since I started the diet. I’m wearing the same glasses and they work. I usually get my eyes checked every two years, as my insurance doesn’t cover eye exams.
Improved vision could be due to less overall inflammation.
@@Jaylwoodworth my glasses are what ultimately led me to getting my "late" eye exam. I could see fine with my glasses during the day but night driving was a different story. Never occurred to me that my eyes had gotten better and not worse, especially not at my age. Guess you'll find out in a bit over a year.
@@marygallagher7392 That's possible. The cataract disappearing is what really boggled my mind. Okay, the improved vision did too, especially given my age, but who has a cataract, even a small one, just vanish? I'd never heard of such a thing happening.
Here are a few tips for your steaks with a thick fat cap. Use a few sticks to string them together, keeping the fat all aligned on one side. When you fry these start with a deep toast of just that fat. The sticks or skewers make keeping them vertical on the pan easy. After the brown color is showing on the fat cap, take out the skewers and lay out the meat for a quick seer. Next, allow these steaks to hold for 5 min. after the seer. They will cook through and not overcook. Almost 1/2 of the cook is in the hold time. Do not cover! Allow the steaks to cool on the outside. I like to cut off the crispy brown part and add it to each bite of the meat.
Thanks for the tips. I’ve noticed that in Brazilian restaurants they like to use skewers to hold the meat that way.

Fact: people think "Big Box" stores like Costco or Sam's will have better meat values than traditional supermarkets. This is terribly false. I routinely get better quality and deals at Tom Thumb/Albertsons /Safeway or Kroger or HEB. Some people laud the value at Aldi or Trader Joe's(owned by German brothers, not Americans). Buyer be aware.
We don’t have Tom Thunb or Kroger here in CT so I can’t comment on them. But Trader Joe’s is a good 20-30% more than Costco. Out big New England supermarket chain, Stop and Shop , is a rip-off. I love ALDIs and go there often, but their selection of meats is limited. To each their own, but I will keep going to Costco.
i have no problems with sirloin! very versatile. they say s&p only, but after awhile, jazz it up with a no sugar bbq rub.
