    Tomato sauce:
    2x 28-ounce cans of San Marzano tomatoes
    1/2 yellow onion medium dice
    5-7 garlic cloves crushed and roughly chopped
    5 leaves of basil to go in at the beginning
    10 leaves of basil to go in at the end
    1-2 tsp of kosher salt to add near the end
    Pizza Dough:
    2.5 cups (600ml) water at room temperature
    1kg or 2.2 pounds 00 type pizza flour
    1 tbsp salt (20g)
    1/2 tsp dry yeast (I used 2 but 1/2 tsp is actually enough)

    You can definitely get away with only doing 1/2 tsp of yeast or so in this dough recipe, I put a little bit too much but it will work either way, Hope you enjoyed this new series, the next pizza will hopefully be somewhere besides Italy! I still can't believe we hit that country first lol!

    awesome. I have a Alpha Brio and will try your dough method vs using my kitchen aid. The other thing since I put toooooooo much cheese and sauce to keep from getting soggy or over cooked and burning the bottom is...put a super thin layer of sliced Provolone, then sauce and then whole milk motz, basil and evo.       I made a lengua taco pizza from scratch last year. Hands down one of the best pizzas I've ever had!

      I made a Mexican pizza, used Oaxaca Cheese, El Pato cooked down to thicken it up some instead of regular tomato sauce. Mexican Chorizo, and grated some Cotijas on top. And I finished it with a drizzle of hot sauce. Since Chorizo cooks so fast I put it on raw and did a 6 minute NY bake. The pools of Chorizo grease added so much flavor, it was a good pizza.
      Your Chilie Verde idea sounds like it would be great I think I'll try that soon.

      They had a Mexican pizza day for lunch when I was in grade school, it was so good! I don't think it's traditional tho, it had sausage, yellow cheese and like a spicy sauce but not too hot. No crust but decent crisp every bite. Everyone would buy double that day.. Have never had one like it since.. 😭

    I probably would have skipped over the attempt at an authentic napoletano style pizza. That style pizza is so specific in its construction and ingredients that it’s better off leaving it alone

    With a regular oven you can try to precook the dough alone with a large pan for a couple of minutes and then add your ingredients. Then put it at max oven temperature (broil will do it) and put the pizza on the top rack, it will cook quickly and mimic a little bit of real pizza ovens. Good luck!

    This looks like it'll be a fun series to watch lol. When it comes to the US, do you plan on doing individual states or the entire country itself? With so many different cultures and different pizza types, can't really just do one.

    About the sauce, try with half spoon sugar before cooking. This reduces the slight acidity.

    personally if i were to do an Italian inspired pizza i would look to non-pizza Italian dishes rather than simply make a traditional pizza
    carbonara pizza? cod? meatballs and hard boiled egg slices? perhaps incorporating coffee into it in some way? something of the sort

    Dude - I have a question for you on the Gozney - seeing how you are detail oriented - I'm wondering if you checked out other brands like Ooni? I have been considering getting a pizza oven as me and my family LOVE it. My brief look shows Gozney's as quite expensive compared to Ooni's.       I've got an ooni wood fired pizza oven in the back yard going rusty..
      We tried making the dough, sauce and getting the fire at the perfect temperature...Unfortunately when you're both drunk and both have anger issues it didn't go so well..

      You should be able to find them at your local restaurant supply store. That said, I got a the pack of stainless bowls years ago at my local Sam's Club. The largest bowl of the three is that size.

    I've been to Drywall.
    Don't recommend it.
    It's a really dusty place and food tastes chalky.
