Cook Once and Eat for 2 Weeks | Breakfast and Dinner Freezer Meals from Scratch

- Freezer meals are one of my favorite ways to avoid overspending on our tight grocery and food budget. I can plan everything out ahead of time and prep all of these in a few hours. Once they’re done, I have several fast, easy, and nutritious meals to choose from and I won’t be tempted to go out instead.

3 Bean Chili
Things to prep before assembling/cooking:
1 lb Cheddar Cheese, shredded
½ lb Mozzarella, shredded
1 cup Rice, cooked
5 lbs Chicken, cooked and shredded
2 lbs Ground Sausage, cooked through
4 Bell Peppers, sliced
1 Bell Pepper, diced
2 Onions, sliced
1 Onion, diced
4 Carrots, chopped
4 ribs Celery, chopped
1 lb Penne, cooked Al Dente
1 lb Black Beans, cooked (if using dry beans)
⅓ lb Chili Beans, cooked (if using dry beans)
⅓ lb Great White Northern Beans, cooked (if using dry beans)

You could be my daughter, using words like, “goosh, all that jazz, wonky,” I say all of those on the regular. All three of my adult daughters say them as well. Another one I say when things are marinating is, “I’m just going to let it get its groove on.” Aka marinate and get happy. You’re so delightful.

Southwest casserole is definitely going to be making it on to my freezer food list. I started making freezer meals maybe 2 years ago. It saves so much time and finances especially since I love to eat out for convenience. I'm glad I found your channel you're giving me ideas😊

You always have great ideas and tips. I love doing freezer meals and actually do more in the summer than the winter. It gets so hot here in the San Joaquin Valley that anything I can prep ahead of time makes a big difference. I love your channel and I hope it keeps growing 😊

I love to meal prep in the summer too. Especially things like overnight oats and easy meals that don’t need to be reheated in the oven. It gets SO hot here too!
I love doing freezer & fridge prep. I place 2 meals in fridge & the rest in freezer. I try to freeze any produce that I can get on sell, of course ones I know I’m not going to use right away. But it’s a saver for sure. I love your channel, you give me a lot of ideas on what to do when stubbed. Thank you so much.
I just love that! That’s such a good idea. I need to do a better job at making double of things that I’m already cooking so I have lots of extras in the freezer. I also love to freeze produce anytime I find a great deal! Such a huge money saver and helps me keep a variety of things on hand.

If waxed paper goes on food, rather than over pan, it protects the surface (just remember to remove when cooking.)

Also, wondering if you can share any instruction/recipe/how much cottage cheese you add to your pancake batter. I was looking at doing this a couple of weeks ago when we had more cottage cheese than we could use. Thank you💗
Thank you so much! ☺️ For the cottage cheese, I usually add it on top of a cooked waffle along with sliced almonds, fresh blueberries, and maple syrup or honey 😋 You can freeze the cottage cheese too, if needed!
I’ll test out a few recipes for cottage cheese pancakes and let you know how it goes! I’m thinking I’ll use it in place of most of the liquid. I’m sure it’ll work beautifully!

Finally gave these blueberry muffins a try, added some protein powder and a little yogurt and my husband loves them! Did mine with frozen blueberries and they turned out great!

I just love your videos! I click on a lot of different ones but yours is one of the few I can really relate to. You make recipes that we really like and you have a realistic budget. Surprisingly your Aldi prices are about the same as ours in Ohio so I have a good idea of what everything is going to cost.

Wonderful freezer meals. I did alot 🎉🎉🎉 and have alot of variety for meals. These are all great recipes... im definitely going to use some ( all 😅) of these in my meal prep. 😊❤

I make a baked oatmeal that has a different ratio of ingredients than yours. For that size dish I would use 6 cups oatmeal, 2 cups milk, 3 eggs, I cup unsweetened applesauce or mashed banana, 1 1/2 tablespoons baking powder and sugar to taste (for me about a 1/2 cup). You can add whatever fruit you like, but I mix it all in bowl before putting it in the pan and then bake until it is firm.Mine turns out more of a cake texture and you really can't tell there is eggs in it.

I heard you aak about Rao sauce. I mean, we love that sauce. It's one of the only ones I will buy. Costco often. Has it on sale for less than $5 for a large jar. most jarred sauces are just reconstituted tomato paste. This one is real imported tomatoes

Spray some spray oil on the foil before baking to help it not to stick . :0)

Thanks for so many new ideas and if you don't want the foil to like touch your top of your dish a lot of times I just spray nonstick spray so I don't have any chance of the cheese just stick in there
