Oh they're so cute! Sometimes you just need tiny pies! And this is reminding me I need to make some blitz puff, it's not hard and yet I always forget to make some in advance.

I have extra apples from the orchard so I’m definitely making these! Can I use flour instead of corn starch?
very niceee, hope you like it! I haven't tried before but you can use flour to sub for corn starch (main thing is to make it thicker!), may want to double the amount if you use flour tho!

Curious if they can be frozen? & then the best way to reheat from frozen? Or thaw first in fridge. Want to make them for his lunches so he quits buying them from convenience stores (& all the crap ingredients in those store bought ones).
i made these earlier today after watching the video and here are my thoughts/notes:
first off, these were seriously amazing. so easy to make even for a chronic dumbass such as myself and made the house smell like cinnamon :) obviously they're better warm right out of the oven like all pastries are but they're still fine cold and great warmed up in a toaster oven. i also had a TON of left over pie filling which i saved for the future (seriously i could eat it with a spoon. it also goes really great as an ice cream topping). my only complaint is that i kinda messed up and didn't have enough puff pastry to make all 18 rectangles so i just made seven and used the one left over to make a mini pocket, which baked just fine despite being half the size of all the others. overall 10/10 would eat again
tl;dr: i will definitely be making these again when i have the chance even if it is simply to make the house smell like an apple pie :) seriously my dad kept mentioning how good the house smelled while i was cooking

Can I use butter instead of egg wash
hmm I haven't used butter to substitute for egg wash before but It should be okay too! it won't change the taste only the appearance since the egg wash is mainly used to make it more glossy and brown when baked and also acts as the glue!
may i ask about the dough amounts !!
