- Enzyme enthusiast, grill master and cookbook author(!) Brad Leone returns for the next episode of It’s Alive, this time to prepare smoked chicken with a fermented tomato purée - a recipe featured in his upcoming release “Field Notes for Food Adventure.” Brad smokes the chicken low and slow, gradually building up a coating of fermented tomato glaze and making for some stellar results.

I can't tell you how much I enjoy these videos. Brad, the recipes, the techniques... But the editing, captions and production are over the top. I enjoy the drop-ins and effects as much as anything. Great crew and great creativity. Love it.
Brad should go to Tomato Fest next year in Nashville. It's literally a festival all about tomatoes.

I’ve got another trick for you Brad. If you use a clip top Kilner jar you don’t need to burp. It burps itself without exploding. You just need to put the jar in a bowl to catch anything that leaks out. You’re welcome.

Ive made a few of his things and they came out great. He got me into fermentation. Some of his recipes are easy and good to make i like watching him.
