      @dylan foley Not remotely true. Modern "Europeans" with Gernamic roots came from about Central Asia. We even have Roman records tracing some of their migrations, as well as archeological evidence. Native populations - Basques, Sammi, etc. were displaced and marginalized.
      Even the Celts didn't come from Europe.
      And to move in, the Gernamic people killed.
      Open a book and learn.

    My grandmother was a Volga German. The bierock (we just called them "cabbage buns") is a staple tradition in my family, we like to make them for birthdays, and everyone has their favorite topping to put inside. You can also get them at a chain restaurant called "Runza," but it doesn't beat home-made by grandma.

      In North Dakota the German-Russians from the Crimean region have something similar called the "Fleischkuekle", it's deep fried instead of baked and I have never seen cabbage in them.

    Though one important thing to note as you mentioned the Cornish Pasty. Unlike the others, the pasty was both a meal and a dessert and fairly bigger than the others, you would make two seperate fillings one of meat and potato and a sweet filling usually apples or other fruit. Then the pasty would have pastry to seperate the two fillings and the sweet side of the pasty would be marked usually by sprinkling it with sugar. The reason being they where made for Miners, you would probably spent the majority of the day underground and having a full meal when so deep underground was practically impossible.
    If you go to Cornwall there are bakerys that still make the traditional version to this very day.

      I grew up in Lincoln, lived there almost 40 years. I've never heard this called a "Bierock". Ever. I even worked for Runza for a time when I was young. No one ever even mentioned that word. I worked all over SE Nebraska and NE Kansas. I've never heard it called that, even at church functions. If anyone wanted to avoid calling it a "Runza" because trademark, it was always just called a 'Kraut Burger'. Now I want a Runza.

    My ancestors were russian germans that moved the Kansas in the late 1800s. My family name is Michel and my grandparents make Bierock to this day! I never thought anyone else knew about them!! So cool!

    I am a Nebraskan. If you want that bierock in a drive thru you would be looking to order a Runza. I'd say its closer to 1 and a half of the size sandwich Motz made. Seasoned ground beef and cabbage live in my heart... thats why its enlarged!

    So I'm a Nebraska native with pretty strong Kansas/Nebraska German roots and that bierock is pretty spot on. They're usually a bit more rectangular (i.e. Runza) but they're not really (at least not that I've seen) a church food. Generally when my family does bierock it's in the fall and my mom and grandma make it in bulk and divvy it up and freeze it for lunches, etc. Awesome to see First We Feast showing Nebraska food some love. I don't know if they've done it yet but it'd be awesome to see them do the original Blackstone corned beef Reuben (the real original Reuben, get outta here with that pastrami nonsense New York).

    The bierocks make me smile.
    I grew up with something very similar, out of a Mennonite cookbook. .... Russian Beruchas.
    We cooked down the cabbage and onions more than here, but same type of beef pocket with cabbage & onions salt & pepper......the recepie didn't have cheese in it but the cheese keeps it from drying out and gives a lot of versatility (from cheese wiz to smoked Gouda or Havarti so many are so good in em)
    Other than folks from the area we lived in where we bought the cookbook I have never found anyone else who had ever had them......I have been introducing friends to Beruchas my whole life all over Canada 😁😁

    The "Bierok" is also called "Kraut Ranza." It's a German sandwich made by cooking beef, sausage, onions, cabbage, sauerkraut, and spices. Then wrapping that mix into bread dough and baking. AMAZING food found at almost every German grandmother's house and church potluck
