CRAB-STUFFED SHRIMP INGREDIENTS:
1 lb extra-jumbo shrimp, peeled and deveined, tails left on
2 tsp Cajun seasoning, divided
10 tbsp unsalted butter, divided
1/4 cup chopped onion
1/4 cup chopped poblano
3 cloves garlic, minced
1 egg, lightly beaten
1/3 cup mayonnaise
1 tbsp whole-grain mustard
1/2 tsp salt
1/2 tsp pepper
1 tsp Old Bay seasoning
1 tbsp lemon juice
1 cup crushed Ritz crackers (usually from 1 sleeve)
2 tbsp parsley, chopped, for garnish
