I gotta try this one but I might cheat and put a slight sprinkle of gruyere on top of each layer of cream.
I've made the mistake of thickening the sauce before layering. Yours came out perfect so I'm trying it your way. Yum!

I've done this before but put a sprinkling of minced leek on the pan first before layering. My mistake has been using russet potato instead of yukon gold so Sunday I am using them instead. I also went to sur la table and bought that same Staub baking pan after watching you. Thanks for the tips.
