FANTASTIC COCONUT FRIED RICE

Coconut fried rice
* 2 kg chicken
* 1 medium onion( chopped)
* 1 teaspoon minced garlic
* 1 teaspoon minced ginger
* 2 chicken seasoning cube
* 1 teaspoon salt
* 2 teaspoon thyme
* 1 can coconut milk
* 1/2 kg shrimp: season shrimp with
* 1/2 teaspoon salt
* 1/2 teaspoon garlic powder
* 1 teaspoon old bay seasoning
* 3 1/2 cup long grain Stella Basmati Rice(Indian Gate golden sella Basmati rice)
* 1 cup chicken stock
* 1/4 cup water
* 1 teaspoon salt
Vegetables used:
* carrot
* Green beans
* Sweet corn
* Red bell pepper
* Green bell pepper
* Yellow bell pepper
* Spring onion(green onion)
