As a chef, I don't watch cooking shows. But I'll watch the highlights of another chefs shift. Thanks for all the really tight shots, especially of the finished product. That helps a lot. Great looking plates.

I am always impressed with the with the organization, all the careful prep work, the fresh foods. Also, how the kitchen is set up with the minimal steps needed at the stove. Everything is so well placed there is no wasted movements. It is like a beautiful, flowing dance. Impressive to watch. I wish I could dine there. Thank you for sharing. It made me happy to watch. I agree. But I always wonder why the kitchen floors are always so rough and dirty, unlike the rest of the restaurant floor, maybe not given much attention because is not seen as much?
@@pauloseibert I saw one video of a Japanese restaurant like this that had a narrow, covered drain running the full length down the work area. So maybe they power wash it after service. It is certainly disconcerting to see them splash water around with great abandon…😆
@@Roheryn100 washing the floor after your shift will suffice, the rest is just visual

Not only am I now hungry and want to reach through the screen to taste that delicious looking food, but amazed at the skill of the chef working through each dish with care, truly amazing.

I havn't had true yakisoba since the 1990's when I was stationed with the military in Japan. I still miss the taste of it, I would have it every week. I think I was addicted to it. If you are going to have an addiction, this is the one to have.
Everything is made to order. No sitting under a heating light or in a heating drawer. The smells must be incredible. ❤

I really appreciate that you break the eggs in a bowl before putting it into the Cabbage. Making sure the eggs aren't bad so you don't ruin the batch 😄

The fact that this is considered as streetfood in Japan, speaks for itself. ^^ As a German, if I relate our streetfood to this, it is most of the time unhealty, not very nurishing and often of very low quality. This here is the real stuff you want to eat!
Well, I wouldn't consider that food as healthy with this amount of fatty meat and the small amount of fresh vegetables.

What you ignore is that what you call street food is delivered in a busy city, constant customers, constant flow. This video is of a small time village, only a few customers per hour, so obviously there's more time to prepare and care for the food. Then agian: Das ist wie ne anständige Semmel vom Metzger. Wenn man das mit nem billigen Dönerladen von irgenwelchen Musels vergleicht, ist es klar, das die Japaner gewinnen :D
