Fyi. The P setting stands for pause and only changes the auger speed or pause duration in the smoke setting in all other temp settings the auger is sped up or down automatically to maintain temp via the temp probe.

That’s awesome to hear. Glad the grill is working great for you now. I only did the smoke stack cause I feel the grill didn’t look right without it. You’ll find the food will taste better the more you use and season the grill. Wait till you see my video I’m gonna drop on Saturday. I think you’ll like it and give it a try if you haven’t already

I just put the foil tape on the outside to block the factory vent holes. I might be making a video this weekend to post next weekend time permitting, of a walk through of my grill to show what I did to it and explain how to do it too

How do you find it with functionality? I’ve been looking at that grill but not totally sure about it
@@paulsq_ i think it is excellent you have the control of a gas grill and the flavor of a charcoal but it is a pain that it is a small electric smoker, but i love to fire up the smoker and open the through vent so gas grilled food can get the added flavor of the hardwood from whatever im smoking at the time , only bad part that pissed me off is the rubber rings around the knobs fall apart and fell off but they are only for looks not function so it still works perfectly

Use the holes in the side so you don't smash the leads.
I normally do use the hole on the side but I can only fit one of my probes through it. I’ve since done a mod to the grill that allows me to use all my probes through the side of the grill. I’ll have that video coming out soon
why would you temp it every inch across it? are you going to cut away the parts that are done and leave the ones to finish cooking?
I just temp it all over just to see how evenly it’s cooking. Sure thiner places will cook faster then thicker ones. I never cut off a piece here or there cause they are done a few minutes faster then the rest. I’ve never had any issues with the way I cook or temp food on my grill. Thanks for watching.

Yeah go check out the Pro 1100 it’s a bit bigger then the Austin XL has a few more features and I believe it’s around $100 more but worth it from what I’ve seen so far

Thanks Gary. I do like the set it and forget it aspect. The P setting on the Pit Boss is for when the grill is on the smoke setting. It has from P0-P7 P4 being the default setting. The higher P numbers used means you’ll get more smoke and less heat and the lower P numbers used will produce more heat and less smoke. Maybe you need to try a Pit Boss and see if you like it better then your RecTec

Thank! This Pit Boss Classic is a great grill for the price. I use the competition blend for when I make smoked salmon. I’d recommend those or pecan, apple. You could use hickory too.

Where did you get the chimney for the smoker and did you plug the holes in the back of the barrel when you put the chimney pipe on?
Hey Brian! I got the smoke stack/ chimney off EBay it was from smoke daddy. I put a link to where I got it in the description of my spatchcock cock chicken video. That was the first time I used the grill with it on. I covered the holes in the back with the foil tape that is used in housing for sealing up duct work.
So can you grill on of these quick like on a direct heat grill?
You can if you turn the heat up on it. You could also open the sear zone to have the open flame and more heat
Is it okay to just place the salmon on the grating of the smoker? And I'm going to try and keep my temperature around 150
I just did a smoked salmon on my Pit Boss today using the "Smoke" setting, which is 180. You'll never keep a Pit Boss down to 150 unless you keep it on "Smoke" and put about a 1-2" piece of wood (depending on outside temp) under the lid to keep it cracked open. The salmon I did today was much smaller than what Paul had in the video. About 2 x 1lb pieces. I smoked them on "Smoke" (180) for 4 hours, then bumped it up to 250 for an hour to crisp up the outer edge. Turned out really good!!
Some people do it the other way, higher temp first, then drop it down. I might try that method next time. I don't know which is better, still playing with techniques. But that's part of the fun, right?!?

Hi, how many Times you putt at smoke and 220 ?
I don’t think I’ve ever had it hit 220 while on the smoke setting. The most I remember seeing is 205 one time
Hi Paul, thanks for the video. I was wondering by smoking it for 1.5 hours, is that mostly for flavor or does it actually cook the fish a little bit also? Sorry I’m a newbie. Also, do you spray anything down on the grill before putting the fish down? Does it stick? Thanks.
Hey Gary, it does cook the fish a little also and the temp being low let’s you get more smoke flavor into it. You can spray the grates with a cooking spray if you wanted too. It all depends on the day for me if the skin sticks or not.

Your not suppose to use foil in a pitboss says in manual
I’ve been using foil in it for 2 years now and nothing has happened. My cleanups are fast and easy with the foil. You use your grill how you choose to
What kind of rack is that?
The rack is just an ordinary cooling rack for cookies.
