HOW TO: Smoked Salmon - PIT BOSS Pellet Grill

  • Smoked Salmon is a great way to enjoy wood fired meats without having to labor over the grill all day. Since it only takes a relatively short amount of time to cook, this is a popular dish amongst seafood lovers who own a pellet grill or smoker. The salmon fillets are seasoned with sweet and savory Japanese flavors and then cooked over a cedar plank to infuse wood flavor and protect the skin from the grill. Light smoke delicately cooks the fish low and slow, while the wood fired flavor permeates the tender salmon meat.

    INGREDIENTS
    1 TSP COARSE BLACK PEPPER
    2 CEDAR PLANK, UNTREATED
    1 TSP MINCED GARLIC
    1/3 CUP OLIVE OIL
    1 TSP MINCED ONION
    1 TSP PARSLEY, MINCED FRESH
    1 1/2 TBSP RICE VINEGAR
    2 SALMON, FILLETS (SKIN REMOVED)
    1 TSP SESAME OIL
    1/3 CUP SOY SAUCE
    HOW LONG DOES TO SMOKE SALMON
    At 225°F it should take about 60 minutes for 2, 1 lbs salmon fillets to cook on the grill.
    WHAT TYPE OF WOOD PELLETS ARE BEST FOR SMOKING FISH
    We recommend using a hardwood with a lighter flavor such as Fruitwood for a delicate meat like fish. Try using Apple Hardwood Pellets with this recipe to enhance the sweetness of the rice wine vinegar seasoning.
    COOKING INSTRUCTIONS
    Soak the cedar planks in warm water for an hour or more.
    In a bowl, mix together the olive oil, rice vinegar, sesame oil, soy sauce, and minced garlic.
    Add in the salmon and let it marinate for about 30 minutes.
    Start your grill on smoke with the lid open until a fire is established in the burn pot (3-7 minutes).
    Preheat grill to 225°F.
    Place the planks on the grate. Once the boards start to smoke and crackle a little, it’s ready for the fish.
    Remove the fish from the marinade, season it with the onion powder, parsley and black pepper, then discard the marinade.
    Place the salmon on the planks and grill until it reaches 140°F internal temperature (start checking temp after the salmon has been on the grill for 30 minutes).
    Remove from the grill, let it rest for 10 mins, then serve.

    Brilliant video. Tried this as my first cook on Pit Boss 850. Turned out absolutely perfect. I put on some corn at the same time and worked a treat. I steamed some beans with sesame dressing and it was a lovely meal. I left the skin on the salmon and that was fine. Took me about an hour cooking time all up. I found the cedar boards at a specialty kitchen place and used apple pellets. It was so easy. Thank you for the great tutorial.

    I tried this recipe at Christmas and WOW! I’ve never been a huge fan of Salmon, I’m in Louisiana and when I have bought it here, it always seems kind of fishy. It’s usually from Norway or Chile and farm raised. However, our local Samsclub had some from Alaska and it looked so fresh I decided to let my husband smoke it on our pellet grill. I’ve tried a lot of salmon over the years, but I will tell you that this was absolutely the best I ever ate! In fact, I was reviewing the recipe because I’m about to make it again if my Samsclub still has the Alaska Salmon! The only variation , I did brine it night before in brown sugar, salt and pepper. I highly recommend this recipe.

    Dang guys, so glad I just saw this video, I have a BRAND new Rec Teq 700, new 40 pound bag of pellets, and some salmon that I just placed on the grill and I am going to follow your advice to the T..., Fingers crossed and cant wait to see how they turn out.     Looks great. How about a top to bottom video of your grill and the capabilities. Smoking something verses grilling. How does the pellets work? Can you use any pellets? How long to smoke meat?

    try 3 spoons kosher salt, 3 spoons of brown sugar a spoon of black pepper , for smoked alaskan salmon ( we use it for our scotish caught salmon ) ☺☺ make a dry marrinade and smoke it

    I did this exactly as you said and it took over 2 hours for it to get to 140° was this how long yours took? You never stated the final time in the video

    Man…. My pit boss temps swing like crazy when I have it on the smoke setting. I’m gonna be honest the recipe looks great but my biggest takeaway is that I think I’ve been using that setting the wrong way this whole time 😅

    Finally trying this out tomorrow; but why is the skin removed? Does that effect how it is cooked on the cedar planks?

    I love plank Salmon! If you can, try to find Alder and or Cherry planks. I am lucky as I make them at work (Pro woodworker). Put olive oil on the planks before you put the salmon on. Also, I use my grill and do this hot. 450-500 degrees. Takes 20 min. The soaking of the planks is to keep them from catching on fire and insulates the salmon from the intense heat. And yes, you videos have possibly changed my opinion of marriage! : )

    Why not put the probe in when you start cooking rather than waiting? I'm gonna borrow this recipe, but I'm thinking I'd prefer to put my probe in when I first put the salmon on.

    ohhhh man i need a pellet grill and poach some salmon , everythings illegal here in the uk , so most outdoor activities are done at night , its a bummer but were not allowed to do outdoor activities in the daytime ☺ it does occur
