You should try various types of bananas while still in the Philippines and there are a wide variety of bananas sold in the local flea markets in rural towns and big cities like in Cebu City's largest market, Carbon Market. Aside from the usual yellow ripe bananas, there are also ripe green bananas, light green bananas, red ripe bananas, purple ripe bananas, orange ripe bananas, etc.

those are banana blossoms (flower) not banana shoots (sprout) and it's use not in adobo but in a sweeter kinda version of it called humba
Kind of the same thing if she puts it that way(banana shoots).
Shoots are lets say older than sprouts, tender new growth on a more mature plant.
And we do cook those with adobo too not just humba
