- It's time to harvest garlic scapes! Today we talk about what a garlic scape is, how and when to harvest them, and most importantly what to do with them! We'll make three easy scape pesto, dehydrated scape powder, and sauteed garlic scapes.

I'm late in getting to my scapes. I've been in the hospital twice since I first watched this video. I harvested some today and decided to cut the flower bulb open since some of them are kind of big. How cool is that!!! They are pre-flower and just like mini bulbs of garlic with tiny little cloves. They taste delicious. I'm going to just go ahead and use them like garlic 😊 Thank you for your video, ideas, and recipes.

Definitely some great uses beyond just the cloves. I grind our spices in the coffee grinder and haven't noticed a difference. But I don't drink coffee. LOL Blinda, on the other hand, often wonders why her coffee tastes different every time she grinds a new batch.
LOL! Well, I suppose some spices like cinnamon might go well with coffee - garlic, maybe not so much…

I use my scapes in stir fry and also chop them as I would cloves of garlic. They make a terrific piccata sauce.
Those all sound delicious! I’ve never tried them in piccata, but I may have to try that this year!
Your video was SO helpful and informative!! I harvested about half of my scapes today and hopefully it’s ok to freeze them until the rest are ready to harvest…? I love the scape powder idea and also sautéed scapes! Definitely plan to try both of those 👍🏻
I think the frozen scapes would work well for pesto - I’m not sure how the other recipes would work with frozen, but I’d love to hear how it works if you give it a try! I have added frozen scapes to recipes in place of regular garlic, and that works well too.
Yum! I have wanted to try making a pesto with garlic scapes. We only had a handful of scapes this year, so we threw ours in a stir fry. We plan to plant a lot more garlic this year!

These look wonderful I will be freezing drying ours then turn into a power mixed with other dried herbs…will try them fresh tonight thank you for these wonderful alternatives and your time.
That powder sounds like a delicious seasoning! I’m growing more scapes this year, so I may try something like that with a few of mine.
How do you prepare them for the freeze dryer? Do you need to blanch them first, do you cut them up fine?

Great suggestions on what to do with those garlic scapes. Also a great tip for people to use a separate coffee grinder for spices than they use for their coffee. Garlic coffee doesn’t sound very tasty:) I have seen people use rice to clean out the grinder, but I use a separate one too.

I use the most tender ones to add to my quiche. I chop them up and add them on top of the first Swiss cheese layer, then add the chopped peppers then another cheese layer then the beaten eggs and cream. It it is very tasty.
That sounds delicious! Do you sauté the scapes before putting them in the quiche?
Yes. I saute them in butter.

Excellent video with useful information. I've grown hardneck garlic for many years and not until a few years ago had I considered removing or using the scapes.
Many CZcamsrs suggested that removing the scapes improved the size of the harvest. That idea sounded intriguing and made sense but I like to test these claims myself. So, in one of my raised beds where I grow about 100 garlic plants, I removed the scapes from half the plants. At harvest time, I separated the plants and did a comparison of my harvest. I didn't notice any significant difference in harvest. Perhaps if I weighed them I would have noticed a small difference, but I'm not really interested in small differences. My approach is, even if there is a slight improvement, why would I bother.
That being said, perhaps there are appetizing ways to enjoy these scapes rather than just throwing them in my compost bin. Some of your recipes look interesting.

I’ve never intentionally tested whether removing the scales results in larger garlic bulbs, although the times I have missed a scape that bulb has been smaller…that could be completely coincidence because I usually only miss one or two. That’s interesting that you didn’t see a difference with such a big sample size - maybe it doesn’t makes as much difference as people think. I definitely recommend using the scapes though - they are delicious!
@@HomesteadOnAPrayer Since I posted my comment, I decided to search for any scientific studies that looked at this practice and what I found is contrary to my observations. The good news for "scape lovers" is that removing scapes can improve the size of bulbs by about 30 to 40%. The bad news is that to achieve this improvement, the scapes should be removed as soon as the flower stalk appears.
So I guess it would be a compromise depending upon whether you want large bulbs or useable scapes.
This kind of improvement in bulb size is intriguing. I think I'll run my trial again next season but this time I'll remove the scapes earlier from half my crop.
For either garlic scape pesto or traditional basil, use bulk purchased unsalted Pistachio nuts. They are around half the price of Pine Nuts and add a richer flavor. We also use either fresh lime juice, instead of lemon, or bottled Key Lime juice. If you're freezing the pesto use ice cube trays and once frozen, store them in freezer bags. It's way easier to control amounts when thawed for use. Try spreading garlic pesto on a grilled cheese sammy.

You should put the powder back in the dehydrated for about an hour as the heat of the grinder puts some moisture back in.
I haven’t had an issue with moisture after powdering, but that’s a great tip for those who do! It might possibly depend on local climate and humidity while grinding to a powder, or possibly on the amount of heat produced by the grinder. Mine didn’t produce much heat, so maybe that’s why I didn’t have an issue.

I have the Gourmia GFD1650 dehydrator, and I really like it. It’s the only dehydrator I’ve used so I don’t have anything to compare it to, but I’ve been happy with it.
Toss the thick portion (below flower - the top portion goes in veggie broth scrap bag in freezer) in olive oil and seasonings with asparagus and onion chunks on the grill!!!

Do garlic scapes smell like garlic (like, strongly?) They're so cool looking I'd love to use them in a flower arrangement, but I don't think garlicky bouquets would sell well.
I do smell garlic a little when I first pick them, but once I get them in water I don’t really notice the scent. They do look so fun - I bet they would add some nice interest to a bouquet! I’d love to hear how it works if you try it!
I'm growing red russian and elephant. First season with elephant so it's interesting to compare. I have to say the elephant scape is a bit disappointing. They also snuck up on me. They were ready to harvest before anything showed on the red Russian. I'll have to ferry into to town for some parm for pesto.

Some people parboil them for 30 seconds to a minute to take the sting out of them before making them into pesto. That is a lower calorie less messy way to prep them than sauteeing them.

@@HomesteadOnAPrayer Yes but I think 5-10 seconds is all they'd need. I've parboiled them before and I can't recall how long I let them cook. I love the dehydrating Idea to make scape powder though. I may try that.. Thanks for the idea.
Do you use lemon juice even for pesto you plan to freeze?
I always do, but if you are concerned about the flavor changing you could add the lemon juice when you defrost it. Honestly we go through a lot of this pesto when it’s in season so I don’t end up freezing much!

I think that would probably work! I’ve never done it myself though, so I would do a search for time and temp recommendations. If you try it, I’d love to hear how it works!
Do leeks produce the same edible scape?
I don’t have a lot of experience growing leeks - I would guess that the flower stalk is most likely edible, but I’d definitely look into it if you’re growing leeks. I’d love to hear how you end up using them!
Can I wait a day after snipping before I make pesto ? Is this ok?
Absolutely! Just stick the scapes in water like a bouquet, and they’ll stay fresh for a few days.
Also can I cut then refrigerate till tomorrow. I just snipped mine and this is my first year .. oh my they smell good
I haven’t tried that, but I imagine they would be fine in the fridge. Let me know how it works if you try it!
I rinse mine, let them dry off and put them on a tray in the fridge. They’re good for at least a week or two! I just trim the dry ends off and make pesto which I freeze so I can enjoy them all year
Can I add scapes ito Guacamole ?
I’ve never tried that, but it’s worth a try! If I were going to try it, I’d probably chop them very finely or pulse them in the food processor a couple times, because they can be a little tough if they’re in larger pieces.
I have both hard neck and soft neck and both gave me scapes🙃

Can you write down ingredients you put it in. Because English is my second language, it hard to follow up what we’re all ingredients about beside olive oil, salt, peeper, pine tree seeds. Thanks
1-1/2 cup scapes, 1/3c each: parmesan cheese, pine nuts, olive oil, 1-2Tablespoons lemon juice
Here are the ingredients I used, but you can adjust to your personal taste. I hope this helps!
1 - 1 1/2 cups chopped garlic scapes
1/3 cup Parmesan cheese
1/3 cup toasted pine nuts
2 tbsp lemon juice
Salt and pepper to taste
1/3 cup olive oil to start (you may need to add more)

I’ve started using almonds instead of pine nut just because pine nuts are so expensive. It’s still delicious!
So depressing! I grew garlic for the first time and I thought they were done, so I pulled them when I saw the scapes! 😩 Ugh!
