Harvesting Your Garlic - The Definitive Guide For Beginners

  • It Is Finally Time To Harvest Your Garlic. After 9 months or more of building (and bulbing!) up, the wait is over at last and Garlic harvest time is upon us! As a low-maintenance crop, the journey hasn’t taken a lot of effort, but we have played our part.
At planting, we ensured the proper time of year, depth, spacing, as well as soil type and of course lots of mulch. As spring rolled in, we were on deck again with fertilizing, watering, weeding, and for hardneck varieties, scape removal.
In this video, I’ll recap all of that good stuff, but the main focus here is the harvest. We’ll go over when to harvest, what to look for, how to dig up the bulbs, as well as drying, curing, and storing the heads of Garlic for long term storage.
It’s a biggie and we cover a lot. But Garlic is an important crop for many of us, so its best to get it right. The video does focus mostly on hardneck Garlic harvesting, but the same rules apply for softneck varieties as well, other than the scape removal. Garlic is Garlic after all. Enjoy!

Im in New Zealand so just harvested 50 bulbs of Creole hard neck. First time I've grown a hard neck variety. Its been a very wet first month of summer so the bulbs were a little wet when harvested but had to get them up. The commercial grower I bought the seed cloves from said to bundle in tens and dry for a month upside down. However I hung them individually bulb side down on my clothes drying rack. As they were a little damp, this maximised air flow around each bulb. I have 50 more bulbs of Keeper and 50 bulbs of Fire soft necks yet to harvest. All of these were planted in May. Its now getting less wet so I can reduce watering of the soft necks and I will plait them in tens to dry once harvested.

Some great advice for beginners, that digging method you show is likely to end up damaging some bulbs, garlic bruises just like most veggies and fruits, hugely reducing the storage time. Often my soil is soft enough that mine pull out easily, otherwise it’s easy to insert a garden fork deep under the roots and just lift them a bit, usually by prying them upward. Happy growing everyone

    Enjoying these garlic videos..
Despite my Italian upbringing and amazing memories my grandfathers urban vegetable garden I’ve only just started to have a go at growing edible plants.. herbs, garlic and chillies
I’m in Perth, west Australia so got my garlic started off a little late at the end of autumn rather than the start but they’re growing (only planted 5) and I’ll be happy to at least harvest something I’m guessing around January (mid summer) it gets pretty hot here in summer so we will see.. but you can’t learn anything if you don’t have a go..

I'm happy to see you grew garlic in fabric buckets. I'm no longer able to work the ground I have to plant a thousand and more cloves, but I've been hesitant to try planting in buckets when our mid-Maryland (zone 6) winters can see temperatures well below 10 F.
I can get fat, purple tinged garlic bulbs for a dollar each from a supermarket (the gods know where the store gets them). So, I think I'll plant 4 buckets of supermarket garlic this fall and see how the winter shakes out.
Thanks for the inspiration. I've missed homegrown garlic these last 7 years.

Thanks valenzsa! Yes, garlic is a fall-planted crop. Its nice though because its planted after the craziness of the summer season is over! :-)

I thought I would come to CZcams to see if it was time to harvest my garlic since a tornado hit our town this weekend and pretty much wiped out my crop, bending all of them over. Since you said that some people bend the stocks over, I’m hoping that just leaving them where they are, and letting the dirt dry out for a few days that I will be able to successfully get some bulbs out of the crop. I tried propping up the plants with more soil, but they just keep lying over because they were probably whipped around like a blender.

Very informative. I am always impressed by how straightforward to make it sound. Years of practice will help I am sure. I have just grown garlic for the first time (soft-neck) and recently harvested around 90 bulbs. 20 or so I hung in my poly-tunnel and these have dried well. The rest I hung in an outside shed. They are taking longer to dry and I have notice that a few of then are now growing stems like your hard-neck scapes and one has flowered. I am thinking it is perhaps not warm/airy enough and should move then to my poly-tunnel. Any advice would be appreciated and will these flowering bulbs still be ok to eat?

Well I've come to the conclusion I should've just planted the garlic cloves I noticed were sprouting on the counter around October, where I'm at in Colorado we do have mild winters in the banana belt but I'm still thinking I missed the boat on planting them. We get hard freezes for a few days only up to a month on end or more, and often times when we have short freezes the weather will be in the mid 60s for weeks following teetering around 32 most nights.
Moving from Florida to a different climate zone was one thing, but man wrapping your head around the super variable mountain weather on top of it is a whole new ball game lol. We've gotten snow as late as the end of May and as early as September.

In my opinion that’s not going to be a problem, when they are very young, usually before they curl, you can pull the scape out of the plant, on the end you will find the most tender little portion, note….don’t pull real hard , you don’t want to damage the roots.

(From Zone 5)....Thank you for your thorough instructions on everything. Some videos leave me with too many questions. I find after watching you they leave out quite a bit of steps...so now I know to come to you for complete instructions.
I've noticed your grow bags with garlic. I only tried these bags once, mulched with straw, and found that my rosemary, thyme +.... did not come back as they always do in the ground. I thought because of the material.. too much air and cold. Do you leave yours outside? Cover them?..... what did I do wrong? I was quite upset since my plants were about 4 years old and so nice. I discovered these bags and thought I could have more space in my garden plus be able to move them around. 😔
