- One of my favorite ways to preserve garlic scapes is by making and freezing this easy garlic scape pesto. It freezes really well and we enjoy this all year long
Garlic Scape Pesto:
50 garlic scapes or 5 cups garlic scapes in 1 inch pieces
2 cups shredded parmesan cheese
2 cups fresh basil
2 cups toasted walnuts or pine nuts
1 cup olive oil
juice of 1 lemon
salt to taste

I make the pesto and put in ice cube trays. Once frozen I pop them into food safe freezer bags and suck all air out. Works great for just the 2 of us.
That's a great idea to have a small amount portioned out :)
We cut them up in just under 1/4 inch long, bag and freeze. Then use in recipes to replace garlic cloves. My Pesto is Basil based, but I'll try yours this year. I love to store in 4 oz Ball jars in the freezer, that's a great amount for a meal, any left over in the refrigerator, lasts a good long while.

I made garlic scape compound butter this year. After mixing, I scooped it out with a small cookie scoop and froze them, then put in a freezer bag. I throw a frozen knob in potatoes, roasted veggies, pasta and over grilled steak. Super delish.

You can also use an ice cream scoop and put the balls in a parchment paper and freeze them to save more space. After that just put all the balls in a freezer bag and it’s easier to use and no need for the glass jar that can actually brake if they touch each other. That’s what we do and I find the process easier.
Yes this is a great idea, I do that with some other things not typically pesto but having a small amount portioned out like that would be handy sometimes

I processed line with a little olive oil and salt. I froze them in Tablespoon mounds, and I will use them as I would use fresh garlic. I also pickled a couple 1/2 pint jars. This is my second year using the garlic scapes. No waste kitchen. I love your channel, made your dilly bean recipe last summer and it is 🔥🔥🔥🔥. Thank you for sharing.

Hi Abbey so nice to see you. I was really surprised how good the scapes were. I didn't start growing garlic till a few years ago. I grow the large Russian garlic. Just love it. Has a good kick to it. I use the air fryer for some of the scapes. Just spray with olive oil in a bowl toss with some pepper and a little salt. Air fry on 400 for about 5 minutes. You have to really watch as it can burn really quickly. Could be less in what type of fryer you have. After a nice browning is on them I grate fresh lemon zest and a bit of parmesan. YUM well we love it. As far as the nuts in a pesto I have now preferred pistachio nuts. I was in Italy touring around a few years ago and in regions where there are a lot of pine nut trees. WELL there were literally buckets of pine nuts on the ground and we were told that you can not take any of them. This brought a tear to my eye it really did. My local grocery store who has pine nuts bulk.... well it would work out to over 30.00 for a small scoop needless to say I will leave that at the store.... what a shame. Cheers Abbey.

Have you tried making garlic escape salt or oil
I havent but I often make an herb salt by pulsing coarse salt and herbs in a food processor, then you can lay it out on trays to dry or dehydrate it on a low setting. I think garlic scape salt would work great that way
What do you use your pesto in?
Mostly pasta dishes or with eggs
How are you going to store the pesto?
I just store in the freezer and pull it out to thaw when I need it
Just made this, exactly as written…..YUM! I’ve never had pesto before so I was nervous about it. But this is soooo good! I used it tossed in warm pasta with some of the pasta water. Threw in some shrimp that I sautéed in garlic scape compound butter from last year. So so good! Thank you for sharing!
