I think she didn't go for longer with the broth (and added aromatics early) specifically because she was using an already cooked chicken. A lot of the collagen has already gelatinized during the roasting process, so there is less to extract during the boil compared to raw chicken pieces.
Sad the only reply so far is spam. As someone who recently learned to take meat out of the oven and let it rest I can safely say, I have no idea but sounds good to me.
Actually collagen/cartilage can completely dissolve in water. Rotisserie chicken cartilage can be in broth for a LONG time before it’s fully extracted
I agree with Roger, aromatics should be put at the end. The whole reason many are aromatic is due to them evaporating quickly. Boiling for a couple hours means they’ve all cooked off.

The Tare she cooked is similar to what we cook here in Maharashtra, India and we call it "tari" which is also a aromatic and spicy oil that enhances the flavor of any curry that we make.

Half-boiled eggs are just budget version of onsen tamago with how many restaurants fucking it up with the yolk being nearly-cooked solid. But for onsen tamago, the egg whites are silkier, softer but somehow stil maintaining the texture.
