Amazing Egg Salad Without All the Mayo

  • This egg salad is perfect for sandwiches or on it’s own as a delicious side dish. It’s stands above the rest thanks to just the right amounts of crunchy celery, apple, and shallot with creamy eggs and potatoes accented with fresh dill and chives. Everything is held together with a scant bit of mayonnaise and mustard for a truly wonderful dish!

    Egg salad is a summertime favorite for me. I love taking it to picnics and BBQs and of course, this recipe makes a killer egg salad sandwich! I sneak a little potato into mine and it’s so good!

    I feel like adding potatoes does not make it a potato salad unless you have a larger ratio of potatoes to eggs

      I make egg-tata-roni salad with equal parts diced hardboiled eggs, diced cooked potatoes, and cooked pasta. Any shape pasta works as long as it is about the same size as the dices. You can add veggies like mushrooms, celery, peppers, and onion and your favorite mayo, dressing, or vinaigrette. It makes a perfect lite summer lunch or brunch, especially when served in a large hollowed out tomato on a lettuce leaf.

    After boiling the eggs for hard boiled I run cold water into the pot and gently crunch eggs against the side of the sink. Than under the the cold running water I remove the shell.

      put vingear in the water when cooking, it helps with the peeling, when cooled.

      @@monemetal01 I learned in cooking class the vinegar "talks" to the chemistry in the egg white and tells it to stay in place when a shell has a crack! : ) So when you remove the lid you don't have a scary large blob of egg white seeping out. Here's an odd thing, If you add vinegar to the water used to boil brown eggs something really freaky happens...the brown peels off! And it gives you the impression they were painted! Or actually skinned. It is a very delicate coating. Also FRESH eggs are most difficult to peel. You want 10 day or older eggs that are releasing/loosening from the shell before you cook them. And yet most run out and get the freshest eggs they can before boiling. Plan ahead and you will never have a hard peel again. ; ) Be well my friend!~

      This!! ^^ I’ve always done this and it never fails me! Also make sure to use older eggs. Newer eggs are harder to peel. The vinegar trick helps too.
      And I recently heard if you take a thumb tack and push it in the bottom of your egg to make a tiny hole, that it helps make sure the eggs don’t crack and explode.

    I add my eggs to boiling water. Boil for 13 min. Cool in an ice bath. I never have any issues peeling. I think the ice bath is the key.

    I wasn't going to try this because I'm an egg salad purist and it didn't appeal to me but...when you spoke so tenderly to your sandwich with the words, "you complete me" you captured my heart.

      Did you try the bread and immediately chuck it in the bin, lol? Tried different Scandinavian brick breads and don't like them at all. Now a Scandinavian crisp bread...that's a different story. Love them for everything.

    Pumpernickel is my family’s second favorite bread (after rye)! I hard cook my eggs via sous vide and always add relish/pickles/green olives to my egg salad along with shallots and celery. Love fresh dill too! You rock John.

      Tbh, it may look like a lot but that really wasn't much mayo. The majority of people I know that have made egg salad add wayyy more, like a whole cup in total, not my type of salad lol. If you still need to take the mayo content down, get all of the boiled egg yolks and mash them together with less mayo in a bowl, then add that to the rest of the salad and it should still turn out pretty thick and nice

    John, make sure your eggs aren't "fresh". Use ones that you have had for at least a week in your fridge....ice bath after cooking makes for an easy peel.

    It is dependent on the freshness of the eggs. The newer the egg the harder it will be to peel. Also keep in the eggs in the pot and shock them under running cold water. Drain out the water and shake them in the pot top break up the shells and the shells should slide off easily.

      Adding 2 big tablespoons of salt to the water before turning on the water to boil allows the shells to slip off easily even if you forget an it them in the cold water afterwards.

    I knew right from the start that this was not going to be a recipe I would make (I am very traditional when it comes to my egg salad - lol), but I still watched the video all the way through, twice, because I love John! He is so down to earth, warm and funny, he is just a joy to watch in the kitchen. This recipe is interesting though and if one day I am ever feeling particularly daring, who knows? I might just break down and put a few potatoes and apples in my egg salad. ;)

    I put my eggs in ice water as soon as I take them off the stove. Then once I’m ready to peel, I lightly smash an egg on the counter and roll it back and forth under my palm until all sides of the egg have been crunched up. Shell should come right off! Sometimes in one or two big pieces, but easily either way.

    Just made this, and it was so good, introduced me to fresh dill, amazing flavor! The combination was perfect. Tried two tips for the eggs that worked really good, I rolled the eggs on the table and used a teaspoon to help me remove the shell.

    Thank you so so much for that recipe! I‘m always a little bit scared when it comes to fruits in salads, but the sweetness of the apple fits perfectly!
    And I make a little whole in my eggs before cooking them, and after cooking I rinse them with cold water. Prevents them from cracking in the pot and makes it way easier to peel.

    I tap eggs on the counter and then roll them with my hand, using just enough force to crack the shell into small pieces. The shell is then easy to peel.

    I made this recipe last night, and it was totally delicious. Amazing how that apple kicked it up a notch. I was looking for a new egg salad recipe because for years now I've been making Bobby
    Flay's Smoked Paprika Egg Salad, which is delicious, but I just wanted a new taste and this really was good. A nice change of pace. Sometimes I make egg salad with Honey-Mustard dressing which is also a recipe. Really like the apple, gives it a nice crunch and just a bit of sweetness.
    Very good.

    Lovely! The fresh dill is one of my favorites also, even added to a green salad it adds such a great dash of fresh flavor. The egg dilemma is one that I have conquered 3 ways. I put some vinegar in the water when I boil it, And putting into an ice bath immediately upon taking it out of the boiling water separates the membrane from the shell. Rolling it before peeling makes the shell come off in a sheet instead of large unbreakable parts that take egg with it.
    The onion dicing is easiest if you keep the end on with the little hairs intact. Then slice into the onion both ways holding onto it, length side and crosswise, then end by putting the knife through as you dice it falls apart. At the end just cut up to where you can to and leave the last piece of off to save for soup or bone broth.
    Love the bread, especially the sunflower flavor that you can get at Trader Joe's/ Aldi, etc. BTW, did you know that Trader Joe's and Aldi are owned by brothers? One went with the more trendy upscale branding and the other split off and went the Aldi route offering high quality but without all the frills attached.
    Anyways, thanks for sharing. Loved the recipe. I have always used apples in my "Auntie Anne's Potato Salad", but had never tried it in my egg salad. AWESOME flavor!
    I am a disabled woman who has had to learn life from a wheelchair for the past 10 years. It's been both devistating and challenging, but cooking has helped me feel like I can still accomplish something. Thanks again for the fun shows! They give me hope.

Better than any therapy. My husband, who is also disabled and copes with PTSD, also finds the same type of hope from your videos as we watch together.     Add a pinch of salt when boiling the eggs or a teaspoon of vinegar.
    Also you can shock the eggs with cold tap water.it helps.

      @@sierrakyllonen6854 Yup, same here. Especially with small kids or pets around, sudden stumbles are a thing. Easier to sharpen a dull blade than get stitches for a wound.

    Never liked egg salad or potato salad, but this salad was amazing. The apple and those buttery potatoes were a game changer. I sprinkled my egg salad toast with some bacon. It was so good. This recipe is definitely a keeper.

    you should poke each egg with a needle at the bottom to make the eggs peel easily before boiling. This will prevent them from cracking as well

    Hi John! I adore your channel. Thanks for all the great recipes and tips.
    Here’s my tip for perfect, easy to peel eggs:
    -Bring the water to a boil. Make sure there’s enough water to cover the eggs you are boiling.
    -Gently add the eggs in one by one. (Keep eggs in the fridge until you add them to the pot. I use a slotted spoon to lower them individually into the boiling water).
    -Boil eggs for 11 minutes.
    -Remove from heat and dunk eggs in ice cold water.
    -Let sit for a couple minutes, then peel.
    They peel perfectly every time. Been doing this for years and there’s only been two or three times when my eggs got stuck to the shell. Hope this helps. Good luck!

    If you add a little bit of white vinegar while you are boiling your eggs, they will peel like a dream!

      @@PreppyKitchen Another thing that helps is to gently crack the bottom and top of the egg and then roll the rounded sides across a flat surface.

      Because it has less mayo. It's pretty simple. The key word here is "all". There's still some.

    Pumpernickel is a German bread 😂
    It’s the sweeter version of our Schwarzbrot (Black bread)
