- Homemade Beet Kvass is a plant based fermented drink or tonic drink that filled with loads of good beneficial bacteria (probiotics), digestive enzymes, vitamins and many beneficial compounds.
It is famous for its cleansing and detox properties. This is an ancient digestive tonic. Vey refreshing and simple to make.
Probiotic bacteria naturally found on the beet skins undergoes lacto-fermentation.
All you need is some beetroots, salt & water.
INGREDIENTS:
1. Beetroot - 2 medium size/250gms
2. Water - around 700ml
3. Rock salt(sendha namak) - 1tbsp

Madam, I have made kanji four times so far. Every time everything was fine, but when I went to prepare the fifth batch, after four days I saw that the fungus had fallen off, the first two days I poked the lid of the jar a little (with a clean dry bamboo stick). Only on the third day the lid was not opened. Now, can Kanji with fungus be eaten or should I throw it away? Please let me know. I know, I bother you a lot, ask a lot of questions. Please forgive me.

no please don't add anything. when beetroot will ferment it will give that sour and zingy flavour.

fungus aa jaye to discard kar de lekin agar ek white film se hai upar to koi dikkat nahi hai, that is just an yeast buildup. Remove it as much possible and use the kvass.
If your fungus is white color dicard if any other color then it can be not consumable

My kvass tests so good. But one kind of white layer is floating on the liquid... I use to clean some of them everyday but the next day they grow back and cover the upper area. Mam please give me a solution to get rid of this problem.
This is yeast formation. This is normal as part of fermentation process. It can be used, do not throw..
after 5 days all the color of the beet came out and mixed into the water..so I strained out the liquid and put them in refrigerator...
