How to make soy milk and tofu using a soymilk maker

  • Do you want to make your own soymilk and tofu at home from organic soybeans? Here's how I do it.
    The amount of Calcium Sulfate I used in the video (1 tbsp. for 1.3 L soy milk) was too much, so if you are using this product use half of that first. after a few minutes if the soy milk didn't curdle, then use a bit more and add gradually.
    I get my organic soy beans from Asian supermarkets. they have plenty of them from different brands and qualities, and they are very very cheap compared to the available online ones!

    Thank you for the tutorial. The tofu making instructions in the soymaker booklet do not mention allowing the milk to cool before adding the coagulant, so I am really glad I watched your tutorial. I appreciate the advice about adding additional calcium to my tofu too. So helpful! I am using a wood mold, so I will need to improvise re. how much coagulant to use. This is very reassuring.

    Edit: Not really sure about the Calcium Sulphate Dihydrate though. My own view would be to stick with Nigari or the vinegar-citrus route.

    @Ella Ch thanks for this great, easy to follow video! I have done it 3 times and can't seem to get my tofu thicker than about 3/4 inch ( it's quite firm). I am using gypsum as coagulant the same as you, a wooden tofu mold, 2 layers of cheese cloth, my soya Bella and a 2 lb can of tomatoes as a weight. Any tips on how I can make it thicker? Can't figure out what I'm doing wrong. I don't seem to get as many curds as you do and yours ends up much thicker than mine.

      Sorry for the late response. Have you tried increasing the amount of coagulant? I think that might help get more curds. Also, make sure you are making your soy milk using the maximum amount of soy beans the machine allows. I hope this was helpful.

    How much water to calcium sulfate? How much vinegar or other acid? Did you add it directly to the soy milk or dilute it?

      It is for the pitcher, in case you want to keep the milk in the pitcher. I have never used the lid to be honest, but since the Soyabella can be used to make soups as well, I guess the lid would come in handy if you want to keep the soup in the pitcher to keep it warm, or to refrigerate it.

    If I already have a tofu press, so you think your model is worth purchasing for the stainless lid or anything else that domes with it?

      I find it really easy and quick to make soy milk using this machine. You could use any other tofu press to make tofu using the soy milk. The tofu press that comes with it is actually very small, and you'd have to put something heavy on it to press the tofu down. But if you already have a better tofu press that is bigger and easier to use it might be better to use your own press. You can buy the model that doesn't come with the tofu press if it's cheaper, since you already have one. And I've never actually used the stainless steel lid to be honest.

    Thanks for this - I wanted to see how well the soy milk from these types of products works for tofu. However some tofu tips - you used far too much gypsum, should have used a teaspoon for this much soy milk really. And you mix it too much - add the coagulant and stir it for about 3 seconds then leave it, you'll get lovely large curds which don't go powdery.

    Thank you - very helpful! Considering purchasing this but had impression “milk” button on lid had to be pressed 6 - 7 times for soy milk process. You only had to press once?

      Thank you for your comment. Yes, you only press the "milk" button once for the soy milk, and the program starts and finishes in about half an hour when the milk is ready.
      When using the other button which is labeled "mill" to grind spices, flax seeds, oats, coffee, etc, the program is about 10 seconds long. Sometimes I do 2 or 3 cycles of it to make sure everything is completely grinded, so I press the "mill" button again after the grinding is finished to restart the 10-second cycle multiple times, although it does a very good job with only one cycle too.

      @@jennifersteel4636 you're welcome. The "milk" program itself includes cycles of grinding. When the program starts it heats up the water first for a few minutes, then grinds the beans for a few seconds, and repeats that multiple times during the program. I guess it is important NOT to grind the beans before water heats up. I tried that once, used the "mill" button first to grind the soaked beans, then pressed the "milk" button. The result was a thick layer of burnt soy milk, stuck to the bottom of the pitcher! So now I know why the "milk" program starts with heating the water and cooking the beans for a few minutes first, before grinding them.

On Amazon, it says - 'Soyabella makes fresh soy milk in as little as 20 minutes and raw almond, cashew, and other nut milk in as little as 30 seconds.' As I understand, these milks should not be boiled. So, how would that work out, as the boiling is a part of the preset program, from what I have seen in your video.

      Thank you for your comment. I have tried it for oat milk before and it worked well. I used dates as sweetener and it tasted good. The only thing that I didn't like about the oat milk was that it separates when you let it sit, and you'd have to shake it before drinking. I haven't tried emulsifying the oat milk yet, but if there's a way to do that it should come out perfect.

    I wonder why you don't keep the whey/water to make more tofu or use in other recipes. Whey water has 25g of protein from the soya beans used. Thanks for the vid, great demo :)

      Thanks for your comment. The tofu is the video came from 1.3 liters (about 5 cups) of soymilk, which was made using about half a cup dry soybeans.

      BTW you can soak the beans/ nuts in the screened attachment-cup, no need to use a seperate bowl & colander and spoon it over

      Glad the video was helpful. I kept taking the skins off in the beginning. It was too time consuming, so after a few times I got lazy and stopped doing that, but never felt a differenc in the final milk! So I no longer peel the soybeans.

    Does the hot water/milk touch the plastic part of the machine while cooking?

      The liquid level itself is below the plastic part, but when the milk heats up the foam that forms on top of the liquid does touch the plastic part. I believe the plastic part is BPA-free and food-safe.

      It tasted really good in my opinion, but different than the store-bought tofu. How firm it would be depends on the weight you use to press it down; the heavier the weight, the firmer the tofu. I would say mine was extra firm.

      @@ellach6791 thanks for the video. I’m trying to decide what milk machine to buy on Amazon right now and I like this one because of the two mesh cups. Seems like it would be easier to use than a hand strainer. The G5 soyjoy does rate higher.

      @@qo2097 I haven't seen the G5 soyjoy, so I'm not sure which one would be better. I'm quite happy with the Soyabella, the only complaint I have is that the strainer is kinda hard to wash after making soy milk, since soy milk is sticky and blocks the strainer holes; but I bet all brands would be the same in that regard. It's easy to wash though with any other kind of plant based milk.

      I have never had or even seen tiger nuts before, so I don't know how hard these nuts are. I have so far used the soyabella to grind flax seeds, rice and oats to make flour, and some nuts and seeds like cashews, almonds, pumpkin and sunflower seeds. Hope this helps.

    There is a lot of soy milk left in this un-copressed okara. Such machines are quite useless since still left and a lot of han work to make.
