If he slices it that fine the heat will pass through it very quickly like all the heat remains in the middle and spreads out but the middle is much hotter etc so a quick mix and chop should get it all cooked nicely
What ever it is, it’s well seasoned and well prepared. Some people only know about salt a pepper…Indian cuisine is older than…everything in the west! Some people could learn a thing or too about yummy food, as indicated by some of the comments

The first thing we were told in the hotel was not to eat anything from the street food that is offered in the streets outside the tourist areas, because the stomachs of non-locals, in my case Europeans, cannot tolerate this food.
