How to make 1950's Company Spanish Rice | Dining Through The Decades Episode 3

- Hello Darlings, in this weeks episode of Dining through the Decades we make Company Spanish Rice! This dish was absolutely delicious, so make sure to let me know if you make it too! Here is the recipe for Company Spanish Rice:
1/4 cup salad oil
2 cloves garlic, crushed
1/4 cup chopped celery
1 1/2 cups long grain rice
2 1/2 cups tinned tomatoes
2/3 cup tomato paste
2 1/2 teaspoons salt
1/2 bay leaf
Few grains cayenne pepper
2 cups hot water
1 pound ground beef
3/4 cup chopped green pepper
1 teaspoon chili powder
1 teaspoon sugar
1 10 1/2 or 11 ounce can condensed beef bouillon
Method:
Heat oil in heavy skillet. Add garlic and celery; brown, stirring constantly.
Mix rice, tomatoes, tomato paste, salt, bay leaf, and cayenne with hot water. Add to garlic and celery in skillet; stir well and cover. Bring to boil; reduce heat and simmer 10 minutes.
Brown beef and green pepper. Remove from heat. Stir in chili powder, sugar, and beef bouillon.
Combine rice and meat mixtures in 3-quart baking dish. Bake in moderate oven (350 F or 176 C) 35 minutes (Add water or tomato juice if necessary; stir occasionally.)

According to my partner, its a north american difference between words for the same thing. I didnt know either.
Capsicum is the genus name for peppers, so it's the wider name used as an umbrella term for most peppers, if not all of them. Genus, phylum, species, etc-capsicum is the genus. So bell peppers, jalapenos, chiles, etc are all part of the capsicum genus.
I just tried this recipe this evening. It was delicious. My husband loved it. The only thing he asked me next time to add is an onion. No problem with that at all! He said this dish need to be a staple for us! Thanks for sharing the recipe

My grandmother made this recipe. Iconic 1950's meal in the states.
The only Spanish rice I ever had was canned, and later on, packaged.

I have made these dishes however it was 30 yrs ago when I was in my 20s first married! Ive done the rice and the stuffed capsicum we call them bell peppers here in the USA. LOL For me this has been a nostalgic trip down memory lane. Thank you.

My great-grandmother was born in St. Day, Cornwall and moved to Mexico where her father worked in the Silver mines close to Vera Cruz. She always made it with chicken broth instead of water, I can see how the water would work. This was a staple when going to her house for visits. She always made pasties for Sunday!
Made this last night with Beyond Meat. It turned out fabulous!! There was so much of it though😁 I Froze half of it for a future dinner. I just love your page and I love that you so easily convert all of these vintage recipes for vegetarians. I am the only vegetarian in my family and this makes it so easy for me to make great meals that I can just add some meat to for my family. 💗💗💗

I made this tonight with a vegetarian ground! So yummy! My husband and I really enjoyed it.
So much fun watching you make this... My mom always made Spanish rice and used to make stuffed green bell peppers (capsicum!) which she baked in a water bath. We ordered a BHG vintage cookbook and can't wait to make this!
I love the old recipes they aren't gourmet but i don't cares about that cause they are easier on the wallet and taste so much better keep on giving us recipes love your vlogs
Invest in a Le cruset pot. You will have it forever. You make everything on the stove top and bake in oven. It’s magic how everything comes out. The best pot ever. I wish I had bought one when I was younger.

I make a similar dish it's called 7 layer casserole we put rice with cream of mushroom and cream of chicken 1 can each then we put Chicken broth mix that together then you put broccoli shredded cheese and ham and onions and just lay it until the pan is full And then cook it for 35 to 45 minutes its so good

I guess Menner's went out of business. Their canned Spanish rice was delicious. But this is a good recipe so I'll try it without celery but with the peppers.

I remember seeing books in the late 60's with sandwich cakes, made out of a rectangular loaf , with different fillings. Can you make one, sometime? The one I saw was frosted with what I think is cream cheese, and had chopped parsley on it.

In Minnesota USA we call that sandwich loaf. Its delicious. It was usually made on special occasions. Yummy!

Hello and so happy to have found your channel! I'm from a small town in the U.S., in Maine. A lot of the way I live is naturally "vintage" I guess. I have a garden, cook, sew, and just have always loved different eras. I made this tonight and it came out very good, I'll make it again.

Sage, you have been cooking foods I grew up on. I have lived down in Cajun Country in Louisiana most of my life, and various meals and recipes have gone down through the ages to the next generation. This a a good recipe to feed a large family or a group of friends.
My present wife could not believe that I knew how to cook such great meals. Meals where everyone stood around and helped chop, grate, or peel while the main cook cooks. Fun times.

I made this rice and it was so good, we had so much of it left after dinner, thanks for the tutorial!
My mother would make this once a week, she said putting in the oven just made more dishes cooking it on the stove in a big pot was just as good.

Ive grown up making this, almost identically! But we typically stuff the bell peppers full and bake them with cheese on top. Sooo good!

This looks D E LI S H... ! I love onion, so I'd probably add that into the Saute` portion, with the garlic, then add the chopped celery. And for using up some of the leftovers... a burrito. Enchilada style. Or with shredded melted cheese on top .....

Oh my gosh!!! This was my Aunt Barbs receipe, my mom has made it since I was a kid, I'm 48 now. This was a staple in our house, I've never seen anyone else make this. Only difference we also use hamburger and onion, and we didn't bake it, we just continued to cook it on the stove until the rice was done. Im certainly going to bake it next time!! We both still make this quite often.

I'm from Argentina and this recipe (as a result of colonization) is a staple dish in my country with some differences, but almost the same. Yours look delicious.

This was the first recipe I learn in my home economics class in 1967! That curriculum must have been old but I was still proud of myself.The recipe I learned didn’t have meat in it and was done completely on the stove top. 😆
That is the only way I have seen Spanish rice, but this looks much better. Now I'm thinking cheese would be great on top.

You should throw the rice in before the tomatoes and coat it in the oil slightly then add the rest of the stuff it’s a trick I learned in culinary in highschool and it helps give the rice a slight toast, I love watching your videos you inspire me everyday 😊❤️

I'm convinced this is what "American Spanish rice" used to be, before it was packaged and mass-marketed as an instant box dinner in the grocery store. I had iterations of it as part of my elementary school lunch that was unfortunately quite bland; and it also does not compare to fresh Mexican red rice, which looks similar but has a completely different flavor profile (no capsicums, cumin, etc. Simply pureed tomato, garlic, and onion as its base)
But this recipe does look gorgeous for those easy, no-fuss dinners. I've jazzed up an aforementioned instant Spanish rice by turning it into a stuffed peppers mixture, and added extra cheese on top. It looked very similar to this. I'm positive that could be replicated with veggie mince and a vegan melty cheese.
You can put a dish towel under your cutting board to keep it from moving around while you are trying to chop.
I'm going to try this, looks yummy and most of the ingredients are things I usually have in the house anyway. Thanks for sharing 🙂

This does look good. I love that you have curly leaf parsley in your garden. In New York, I can only find Italian/flat leaf parsley, but I like the flavor of the curly parsley so much better.
You know James snuck down in the night and demolished another plateful of that. Imagine Sage catching him, curlers in and rolling pin in hand you know just to continue the 1950's theme lol.
