I wish I could find cream in glass bottles! It’s nostalgic but also I love being able to see what’s in the bottle. Noting worse than thinking you have enough for a recipe and that little carton ends up disappointing.

Oh John I only lasted about a month before I replaced my mortar and pestle. It amazed me how often I relied on it but on a happier note I found one in Greece hand made out of olive wood so it was a needed purchase not the I like it better purchase. Win win!

I like Med. Rare as well. This looks delicious. Funny, I use to use a pizza pan as my lid for my 12 qrt iron skillet all the time. I now have a glass top stove. So no heavy cast iron pans anymore.

You can use different cuts of meat to be honest. it's about the way you cook it and the sauce

THANKS for the info. I had always seen it as a white sauce (country gravy) I had no idea it was suppose to be a darker color. Also I like my steak medium rare as well.
This looks amazing, I'm gonna make this with some homemade biscuits and totally pour that sauce right over my biscuit too. 😉
Just so people know, when the flame dies on flambe, it's because there isn't enough alcohol to keep it going in the presence of the water content, so firing doesn't get rid of the alcohol, it just lowers it. Imagine lighting a beer. It won't catch, because the alcohol content isn't high enough.
Technically, to get rid of it completely, you might have to simmer it for quite a while.
How long would i cook each side for medium well or well done?
I have 2 ways of cooking steak au poivre. exactly like you did it or adding green peppercorns in the last 2 minutes of the steaks in the pan. Then make the sauce as you did. What do you prefer?
What brand cognac do you use?
My coffee grinder does the job with peppercorns to however fine a grind I want.
i have a question i know you added brandy if we don't want to add any alcohol what we can substitute instead
