I want to troll your english but, I will refrain. I heard black pepper becomes bitter when you fry it ?
To your question: no, it doesn’t. If you watch Chef Jean-Pierre’s au poivre recipe he comments he doesn’t know where this idea comes from, but nothing bad happens to the pepper at this temperature. I can attest to that as well, it still tastes delicious.
I recommend his recipe, it’s the best au poivre I’ve had!
