Smoked Beef Rib Adobo

  • This is far from a traditional Filipino Adobo but it’s my twist to how my Mother who was Filipino/Cajun French use to make it. By far one of the best I have ever made. 💪🏽

    Ingredients:
    • 2 racks of beef short ribs
    • 1 whole garlic minced
    • ½ c low sodium soy sauce
    • ½ c cane vinegar (sub for white vinegar)
    • 2 c water
    • 6 bay Leaves
    • 1 med yellow onion (optional)
    • 4-6 small brown potatoes (optional)
    • 1 large jalapeño (optional)
    • 2 tbs brown sugar
    • 1 tbs black peppercorns
    Instructions:
    • combine soy sauce, vinegar, bay leaves and half of the minced garlic in a bowl and mix
    • in a pan place ribs and pour mixture over mixture and marinate for an hour
    • pat dry ribs, coat w/ salt and pepper
    • smoke at 300 till internal of about 160 3-4 hrs
    • in a large pot pour in marinade and all remaining ingredients including sliced ribs
    • bring to a rolling boil then lower heat, cover and simmer for 1 hr
    • uncover and continue to simmer for 1 hour to reduce some of the liquids
    • serve over rice and garnish w/ crispy fried garlic and scallions then enjoy 🤙🏽
