Simple Guyanese Pepperpot Recipe

  • Learn how to make Guyanese pepperpot stew with Caribbean cookbook author Chris De La Rosa. A delicious meat stew, pepperpot is basically a variety of meats, braised in a cassareep infused liquid and cooked in Guyana during the holiday season. Most Guyanese like a thick slice of plait bread and a serving of pepperpot on Christmas morning.
    For this Guyanese Pepperpot you'll need...
    4 lbs of meat- (beef and goat)
    1 cup cassareep
    2 cinnamon sticks
    1 1/2 inch orange peel
    4 cloves garlic
    4 wiri wiri peppers (or 1 scotch bonnet)
    1/2 cup brown sugar
    1 1/2 tsp salt
    8-12 cups water
    4 springs thyme
    6 cloves (optional)
    2 onions (medium)

    I've been watching your videos for years and someone always have something negative to say so I'm saying this thank you for taking your time out and putting yourself and your recipes out it helps many ppl it helps me for those who it don't help and they tend to know better where's their channel their cookbook or whatever I've come to learn that it doesn't matter where you're from you can live right next door to someone and the recipe will be different it will never be the same there is no mandate that things have to be cooked this way or that way for it to be 100 % traditional I have family in Guyana Puerto Rico and all over the West Indies and depending on where your from in what village over the bridge near the lake past the damn bush it's the same damn thing ppl will cook the same dish and have a different recipe before anyone opens their mouth they really need to research and see how every island is connected who settled here and there at the same damn time what was the influence on food stop being ignorant if you don't like Chris way don't watch

    All you wanna-be chefs out there....THE FIRST THING HE SAYS..."This is my version of...." Jeez!!! If you weren't so nosy, you wouldn't be all on his channel! Obviously, you're curious as to how he cooks! Why don't you get your OWN channel, cook YOUR way and stop criticizing this Brotha style! Chris...you bring back memories of my moms friends that was from the Caribbean...she cooked all that stuff, but I was too young to appreciate it! My palate wasn't mature enough, plus I didn't grow up eating that way! Now, I can't get enough of it! When I cook along with your video....people come up to my door and ask what am I cooking! Everybody want a plate! Thank you Bro for teaching this gal how to cook food that she loves!!!

    OMG! Thank you! I have been looking for a pepperpot recipe for the longest. My grandmother was Guyanese and would make this every Thanksgiving and Christmas dinner. "Mama," my grandmother was old school keeping all her recipes in her head, never writing them down. When she passed away she took her recipes with her.     I cook Pepper Pot ever Christmas for my Guyanese husband with bread. You must have fresh bread! I usually have my sister-in-law send me REAL cassareep for a Caribbean store in New York, but this year she got it shipped from Guyana. I usually put ox tails, beef, pig tails and pig feet in mine. I also add the orange peel, cloves, a little more cassareep and less peppers so that I can eat it. Great Job! It just how my mother-in-law taught me!

      pig tails, ox tails, pig feet? sounds like the REAL deal there. YUM! Only other thing - people in the interior - Amerindians - often through in a little fish now and again, although most old people on the coast, in town, use the oxtails, pig tails, pig "trotters". But then, people in the interior can keep this pot boiling all year and just throw in whatever they happen to catch that day. Just curious - wondering if the cricket club still got their pot boiling?

    caribbeanpot...Chris, i found some Casreep in Chicago last weekend and I was beside myself. I intend to use it this weekend for my July 4th cookout to make my fried rice. Thanks to one of your viewers who commented on one of your videos that she uses that for coloring her friend rice. Yes sir.....thank you again!!

    "that's not real pepperpot". Does it really matter? He even said that his take on pepperpot may be different. And everyone has their own style.I'm married into a Guyanese family and from day one I've had many of their well know dishes prepared in different ways. Not everyone likes beef,some prefer goat. My cousin (by marriage) is Ameridian and she makes it with fish. There's no right or wrong way especially when the country has a mixture of different nationalities and blended culture. Keep up to good work!

      Alexis P yes like you said the amerindians uses fish for the pepper pot. Also their pepper pot isn't black it is mostly off white or cream in colour and they use large meaty fish as meat with cassava bread instead of regular store brought or homemade bread

      Yes that what guyanese traditionally make pepper pot with beef and ox-tail we don't use no other meat

      Pepperpot is an Amerindian recipe. Guyanese don’t just use Oxtail and beef to make pepperpot. You can use whatever meat you want. Some people use Goat, beef Oxtail, cow heel, pork etc.

    Looks so good! I make mine with oxtail and pork and cook it in the slow cooker so while its cooking I have lots of time to make bread to go with it. We have Pepperpot on Christmas Eve for dinner and then on Christmas morning for breakfast. The entire family looks forward to it!

    Hey Chris! Your recipe is good. Although I'm not Guyanese, I've had the pleasure of eating Pepperpot when I was a kid back in NYC. I cooked it the way you make it and it taste just like when I was a kid. One of my all time favorite dishes.

    Season's Greetings!! Oh goodness! My mouth is watering. This brings back memories of growing up in my Guyanese household where Pepperpot was a staple during the holidays.     I am always puzzled when I watch these videos and see persons who say they are cooking guyanese dishes not seasoning their meat at all,That is a definite no no for me.Also what is it with all those onions .Guyanese makes a big pot of pepperpot which is kept for several days over the holidays, so that is wayyyyyy too much onions.
