I lived for 3 years in Vietnam and had a banh mi for breakfast almost every morning. For breakfast nothing beats a basic bánh mì thịt nguội with pate and cold cuts and if you want something more filling as a snack, the best choice is bánh mì heo quay.

Banh mi and condensed milk is so good! And honestly yeah banh mi doesn't always have to have pate. Its all about balance of flavors. For myself there are certain banh mi I would not want pate in because it would be too overwhelming and too much!

Up North, specifically Lạng Sơn (idk about others, i asked my friends who are from different regions and they said they don't have this dish). It's called Bánh mì nướng, basically, it's bánh mì grilled over charcoal and brushed with lard and oyster sauce. You can have it like other types of bánh mỳ with grilled meats, pate, sausage, vegetables..... Fillings Or you can cut up everything bite size and have it platter style with dipping sauces. Popular student breakfast or late night snack.

I did side-eye you for the bo kho as you probably could have done a series for savory banh mi that is dipped (but then you'd have to do the same for the sweet ones that are dipped), but it makes sense to show the variety of how banh mis are eaten there. I thought when you did the pate one, you'd do the banh mi cay/que like made famous in Hai Phong. Definitely do a 12 part series showing all the banh mi as there's the egg one, the fried fish with dish (patties vs noodle shape, but maybe that's the same just in different form?), cold cuts, char sieu, roasted pork belly, lemongrass beef/chicken/pork. I love that last one you tried because it's so different. My dad made a version of char sieu pork belly that he douses in a caramelized onion and ketchup sauce and pickled carrots that is AMAZING! I wonder if that sauce she used is similar to my dad's ketchup sauce (I'm sure he was improvising when he made the sauce as ketchup isn't something Viets use).

I was surprised that I didn't know half of the Banh Mi style in this tier list although I'm a Vietnamese.
You should try Haiphong Breadstick, or Banh Mi Que, it's a small breadstick filled with Haiphong Liver Paste or Pate Cot Den (which has softer texture and melts on your mouth). The key point of Banh Mi Que is Chi Truong, which is a really spicy chilly sauce usually stored in a small package (the one that hold canabis :)))). You should dip just the tip of the Banh Mi Que at first to get use to the spiciness of Chi Truong, then you can deeply dip it to enjoy.

I vividly remember the first time I ate a banh mi in Vietnam. I was in Phuc Quoc, it was morning. I went downstairs from my hotel room and went across the street to a little shop that had a glass display case of banh mi. It was a very unassuming shack with bare minimum setup. I didn't think much of it, had zero expectation of the food being good. I ordered your usual run of the mill typical banh mi with whatever meat they had. As a Vietnamese growing up in NYC, I've ate my fair share of banh mi thit. Between store bought and home made, I'm not stranger to the sandwich. But that banh mi from that unassuming glass display case..... HOLY SHYT IT WAS SO FUKN GOOD! I couldn't believe what I was eating. How can a banh mi from a small shack (with the same typical ingredients that I would get back in the states) taste this far superior to any banh mi I have eaten in the past? My mind was blown. It couldn't comprehend wtf was going on with my taste buds. Then I realized one of the major factor that sets Banh mi from Vietnam apart for the banh mi in the states, it was the bread. If you never had a banh mi in Vietnam before, you need to. One of the things that one needs to eat before one dies.
Flash forward two year later (oh you thought I was done telling my story) I came back to Vietnam with a college friend. We were in my hometown (Soc Trang). We left the one park in the center of the town (it's the one with the big pond in the middle with koi fish) and there was a banh mi stand. I decided to get 2 banh mi. My friend asked why because we just finished eating not too long ago. I told him to shut up and listen to me. We're going to get them for when we're back at the hotel. When we got back to the hotel, I went to take a shower. While I was showering I heard a scream from my friend. "HOLY SHYT THIS BANH MI IS MAD GOOD!". He then proceeded to snapchat everyone he knows back in the states about it.
Safe to say banh mi are good.

I am obsessed with shredded chicken banh mi!!!! I ate it for the whole 4 years when I was in college. The most delicious shredded chicken banh mi, in my opinion, is from a really small vendor cart next to Van Lang University, on Nguyen Khac Nhu Street in District 1. The chicken was stir-fried with onion and seasoned very well to my taste. I normally only take banh mi + pate + shredded chicken and fresh chili, with no cilantro or cucumber added. I don't know why, but the more I grow, the less cilantro, cucumber, or pickles I want to add to my banh mi. I just want to taste the original flavors of the banh mi. 🤗

Another recommendation is banh mi with dim sum inside - sounds kinda heavy but it has its own charm, this may be hard to find, and only a handful of places selling it. The “bơ” was a cross between a Mediterranean “mayonnaise à l'ail” and a Provençal-style “aïoli”- also known as "Le beurre de Provence,” in contrast to the traditional cow milk-based salted Beurre Bretel from Normandie. Beurre Bretel, Maggi, and La Vache Qui Rit trio formed the original flavour profile of the Vietnamese “bánh mì thịt,” with pâté and charcuteries. With the profuse addition of pickled vegetables, herbs and greens (“à la Saigonnaise”), the tangy and garlickly aïoli/mayonnaise à l'ail proved to be a better accompaniment. Finally, the word “bánh mì” was not a corrupted form of the French “pain de mie.” “Le pain de mie” denotes a rectangular loaf of soft bread referred to as “bánh mì sandwich” (i.e. to make British crustless ham and butter tea sandwiches).

    • @NguyenMinh-mp2jx
