Great video, Roel, keeping it simple and elegant.
Those ribs, before smoking, were exquisitely marbled and would challenge many of us in the cost arena and "high risk" arena of turning lemonade into lemons" to buy them. 🙂
I'd like to see you do a series of comparisons (unlimited in options of content for your viewership) of some relatively low cost meats vs. higher cost meats (of the same type) so as to see if cooking style vs.quality of meat is the difference.
The old expression of "A good sauce can cover up a bad meat" always intrigues me. As does "Choice vs. Prime done the same way yields different results".
