- 🟢材料:
豬腩肉 700 克
冰糖、蒜頭、薑、蒜苗和辣椒 適量
香料:花椒、八角、桂皮、月桂葉 少量
🟢做法:
1️⃣ 將豬腩肉用少許薑、蔥、酒汆水,撈出洗淨切粗件。
2️⃣ 豬肉煎至面金黃盛出過多豬油。
3️⃣ 加入香料、薑、蒜頭、2湯匙紹興酒、冰糖、1湯匙生抽、1湯匙老抽,適量鹽。
4️⃣ 加熱水浸過豬肉面,小火炆1小時。
5️⃣ 加蒜苗辣椒炒至剛熟,上碟享用。
🟢Ingredients:
Pork belly 700g
Rock sugar, garlic, ginger, garlic sprouts and chili peppers, to taste
Spices: Sichuan peppercorns, star anise, cinnamon, bay leaves a small amount
🟢Cooking Directions:
1️⃣ Blanch the pork belly with ginger, scallions, and rice wine . Scoop out , wash, and cut into thick pieces.
2️⃣ Pan-fry the pork belly until golden brown, then remove excess oil.
3️⃣ Add the spices, ginger, garlic, 2 tablespoons Shaoxing wine, rock sugar, 1 tablespoon light soy sauce, 1 tablespoon dark soy sauce, and salt to taste.
4️⃣ Add enough hot water to cover the pork belly and simmer on low heat for 1 hour.
5️⃣ Add in garlic sprouts and chili peppers to stir-fry until the garlic sprouts just cooked.

@@tingyan61 我忘記了它是5層鑊還是7層鑊, 我都覺得幾好用, 鍋不會發黃發黑, 至於黐底, 我覺得它不容易黐底, 但相比不沾鍋還是有點距離的, 沒有不沾鍋那麼好.
@@tingyan61 我平時煮食不會把鑊燒到好紅好熱才落食材, 所以不覺大油煙.

照做也不難,不過豬肉現在太貴了,想知你用的是什麼鑊?我用過不銹鋼都會燒焦的,你炒一點也不會燒黑,可以講什麼牌子嗎?
牌子是Buffalo牛頭牌, 忘記了是五層鑊還是七層鑊, 用了很多年, 鑊耳爛了, 疫情過後我要去買個新的,謝謝您!

Ingredients:
Pork belly 700 grams
Ginger -- moderate amount
Garlic cloves -- moderate amount
Garlic sprouts -- moderate amount
Chili pepper -- moderate amount
Rock sugar -- moderate amount
Seasonings: Sichuan pepper
Star anise
Cinnamon
Bay leaves
Steps:
Blanch pork belly with moderate amount of ginger, spring onions, and Shaoxing wine for 15 minutes, Wash and cut the pork belly into thick parts, Pan-fry the pork belly to golden colour on both sides, Scoop out any excess oil, Add in the seasonings, moderate amount of ginger slices and garlic cloves, 2 tablespoons of Shaoxing wine, moderate amount of rock sugar, 1 tablespoon of light soy sauce, 1 tablespoon of dark soy sauce and moderate amount of salt, Pour in hot water to cover the pork belly, Simmer for 1 hour at low heat, Add in garlic sprouts and chili pepper and stir-fry to cooked to serve.
