The earliest mentions of lemonade, which was lemon juice mixed with sugar to make it more palatable, were prescribed as medicine to treat the flu, headaches and stomach aches as early as the 10th century in Egypt. However, by the 1600s lemonade began to be served as an enjoyable drink for both the ill and the healthy in France and England. Step forward to 1700s and now lemonade was wholly enjoyed non medically as a street beverage. Lemonade was sold by street vendors, some of whom had stands while others walked around with barrels strapped to their back filled with the sweet drink. France especially went crazy for lemonade with lemonade street sellers being a usual site on the streets of Paris from the 1750s and beyond. This was NOT a drink reserved for the wealthy. Those of the middling class, which we may now describe as the middle class, were able to enjoy the beverage. Citrus fruits would have been a luxurious novelty to those who were very poor, however. Lemonades of the time were often mixed with eggs, spices and sometimes even sherry. The first reference to carbonated lemonade is from 1833 London. By the 1800s lemons, and other citrus fruits, could have been acquired in France, England the United States through water travel. The same is the case today. Lemons do not grow in Missouri even in 2024, where I live. Therefor, they must be grown elsewhere and shipped up to be sold in markets. I was surprised to learn from an orange farmer that it is common practice to pick citrus fruits up to 6 months before they even make their way to a grocery store.
Make this lemonade recipe at home! It's actually...good? 😲Really, I was surprised. You can't taste the eggs at all and they only serve to thicken the drink. This is lemonade just with more protein!
Lemonade, The Cook's Own Book (1832, Boston)
    1 gallon of water
    1.5 cups of sugar
    3 lemons
    3 oranges
    3 whole cloves
    1 tsp of ground cinnamon
    6 egg whites + 1 yolk, whisked
    A jelly strainer OR cheesecloth
Zest & then juice the oranges and lemons. Add the zest to 1 gallon of water along with the juice, sugar, cloves, cinnamon and whisked eggs. Stir up well in a stockpot. Place the top over medium high heat & bring to a boil, stirring all the while. Once boiling reduce to a simmer and simmer for 10 minutes. Be sure to stir frequently. After 10 minutes remove from your heat. Carefully pour though a jelly strainer OR 2 layers of cheesecloth. Place in a cold place to cool till chilled. Enjoy!

My grandmother used to make this citrus drink in the summer. It was a mix of lemons, limes, oranges, and several other citrus fruits. It was exquisite. Sadly, I never asked her the recipe for it before she passed. I have struggled for years to recreate it, but have always failed. I can't get the mix of fruits or the ratios of them ever correct.

My stepmother used to make two versions of this same recipe:
For the cold and fast version. she left out the eggs, quartered the lemons and oranges, pureed them in a blender with the sugar and spices and ice cubes, strained the puree through a sieve and served.
She also made the egg whites and yolk method on occasion which, like in the video, takes a few more steps and takes longer to prepare. That was like drinking a lemon/orange creamsicle.
This was my favourite. before I developed an allergy to oranges.

Same cup for everyone but what a treat! The town may have charged or taken a donation beforehand, I don’t remember, but it was special to them.

The "Little House" books were among my favorites to read as a kid! I do remember in the first chapter (I think) of "The Long Winter," Laura talks about delivering ginger water to her Pa, who was working out in the field collecting the hay. I've often wondered what that ginger water would taste like. As a kid who was still learning the art of cooking, the only ginger I knew about was powdered ginger. I added it to water, and it was awful! I figured there was more to it that I didn't know about.
Justine: Have you ever seen any mention of ginger water in those older receipts? Ginger would be very good for the stomach in this scorching heat. I'm down in SE Texas. Our highs have been around 95-96F; heat indices have been around 107-109F with all of this humidity. Please be careful with this heat!

I never knew it could be so complicated to make lemonade, but in a time when it was sometimes a good idea to boil all your drinking water it makes sense

Hello Justine and Ron! I am from Germany but live in the Dominican Republic and find your channel very informative. Some of your old recipes remind me of my youth in Bavaria. I am also reading all the "little house" books with which you are surely familiar. So I have a question: Neither in the books nor on your channel is mentioned where everybody is doing their necessities Was an outhouse normal for everybody ? I know its kind of an awkward question but its part of life. Saludos from the caribbean!

Would be nice to see you make Stag Sumac tea when the berries get ripe. It makes a good Lemonade substitute. Good Job.

I'll have a go at this one! Do you use up the yolks in another dish? It would be so easy to to make noodles!! This would definitely be a great homeschooling project!!
