3 bls (1.361 kg) ground beef (I used 85 / 15 fat to meat ratio)
1 medium to large onion finely chopped
5 cloves garlic minced
6 Tbsp (40 g) chili powder (I used McCormick Brand)
3 tsp (7 g) smoked paprika
3 tsp (8 g) garlic powder
3 tsp (8 g) onion powder
3 tsp (7 g) ground cumin
3 Tbsp (49.5 g) tomato paste
7 cups (1.65 L) low sodium beef broth
1 chipotle pepper in Adobo sauce
2 Tbsp Adobo sauce from can of chipotle peppers
2 - 15 oz cans pinto beans (drained and rinsed)
salt and pepper to taste
For corn starch slurry
4 Tbsp (35 g) corn starch
4 Tbsp (60 ml) cold water
INSTRUCTIONS
- In a preheated on a medium high heat 6 .5 qt pot add 3 tbsp oil and ground beef
- Add salt and pepper to taste, cook ground beef for 5 to 8 minutes
-Now add garlic and onion, combine and continue to cook for 3 to 5 minutes
- Next add and combine all dry seasonings and spices to cooked ground beef
- Now add tomato paste, combine and cook for a minute or two
- Next add beef broth, stir and mix well
- Add chopped chipotle pepper, adobo sauce and bring to a boil
- Cover pot with a lid, lower the heat and gently simmer for 1 hour stirring through out
- After and hour add cornstarch slurry to thicken chili
- Add drained and rinsed pinto beans combine and simmer for and additional 15 minutes then serve

I love seeing how other people make chili. One thing I do is make it sometime in the afternoon in a dutch oven then throw it into a low-ish oven for hours until I'm hungry. The beef comes out so tender.

If you have any leftover smoked brisket, throw it in the chili. Awesome!!!!
I made this for my family on Sunday. I added 2 small cans of green chilies, 3 cans of drained and washed kidney beans and a quarter teaspoon of red pepper. It was FANTASTIC!! I had a little bit left over so I added some more broth to it and served it over spaghetti noodles. I am going to can this chili up. Two thumbs up!
I also add Rotel tomatoes to mine 😌
Im mexican my mom would make these chilli beans spicy ass hell with serrano and jalapeño peppers.... We would make tacos and put some queso fresco or queso cotija.... Even though they made us sweat from the spiciness they were very delicious 😁 donde esta mi raza mexicana que hacia lo mismo?

FINALLY! A recipe that is absolutely perfect for someone like me, who does not like bell pepper and tomato chunks (tomato paste is fine). You even finely minced the onions in a way that wouldn't be noticeable in the chili. At this point, you are a godsend, so thank you!

This was delicious! I used what I had on hand (2lbs ground Turkey and 1lb pork sausage). I also added some bell peppers and Peruvian beans. I snagged the beef seasoning from a few of my top ramen. In the end it all worked out. Everyone loved it! I can always rely on your recipe's. Thank you! I 🤗

I made this chili for dinner tonight and I have to tell you it was fantastic. The beef broth gave the chilli and rich flavor. It was nice to have chilli without so much tomato in it. I also made homemade sweet cornbread to go with it. I will definitely be making this again. Thanks for sharing your recipe.
I tried this recipe last week, and it was soooo good. I had enough for two days left over, and on those days I couldn't wait to get home to eat some more.
One way I like to thicken my chili is adding refried beans, I know that sounds kinda weird, but it comes out great!

I made this yesterday and it was very tasty but also super spicy. Today I had it again with potatoes and it was the best chili I've ever tasted. I think the potatoes helped balance the spiciness of the chili. My tip is to give it a day before eating because it's so much better and tastier.

I just made this yesterday with Fritos and it was very good! I used ground chipotle powder along with the ground red chili powder and the heat was perfect! It made for an awesome Frito Pie!

Sounds gross, but it really is delicious. Make sure to use a good quality sweet corn and be sure not to overcook or it will become tough

OMG! Tomato paste, My mom would add a bit of tomato paste to her beef based crock pot and some beef dishes, she said it slightly adds to the beef flavor. Love this channel..
Wow, I've never heard of beef broth in chili but I'm going to try it as i prefer less tomato as it's so acidic. Love chili though so 🤞this will be a welcome change to chili in our house...

I just made some chili last night. Usually, I thicken it using instant mash potatoes. Works just as good as using corn starch or flour.

I think the mashed potatoes don't change the taste at all. For some reason I can tell when there is cornstarch in chili

I use ground beef, stew meat, and chorizo. 2 Pablano peppers, 3 jalapeños, onion, and if you like beans I use ranch style beans, add the entire can including the liquid. Chili powder, cumin, Rotel tomatoes and chicken or beef broth. Salt and pepper. My whole family begs me to make this all the time. It's so delicious. The chorizo makes it so good!!!

My favorite beans for any type of stew that needs them is HEBs Borracho Beans which just take flavors up to another level. They also have that wonderful chili grind with the bigger chunks to really add texture. Just LOVE your channel and I'm like everyone else, how on earth do you keep your stove top that clean?!?!

I made this for dinner and my family loved it! I added black beans and made Indian fry bread to go with it and we're stuffed. There's a bowl left so my daughter is taking it for lunch tomorrow. I had bought a Tenderloin and the butcher ground up the trimmings off the wellington cut and I used the ground tenderloin for my chili :)

Thank you for adding beans. We Mexican-Americans in Texas mostly make our chili with beans. There is a debate and some people say it's not true chili if it has beans in it. Well this is how the vaqueros did it when they were in the pasture for days and weeks along with pan del campo amongst many other Mexican-American dishes. I love this recipe.
As a fellow Texan that loves Texas history, I 👍 agree. Chili was made on the trail or in the pasture. There wasn't a Walmart down the block. Every pot was different. They used what they had and made the most of it - something I believe this country is on the verge of learning again, be it fortunate or unfortunate.

I tried this recipe, i didnt have beef broth so i used beef stock cube in hot water, and replaced chili powder with chili sauce, it came out great! Super yummy. Thank u for the recipe!!

I've been a subscriber to your channel for a little while now and I really have wanted to try some of the recipes you show.
However I've never really cooked except for some easily prepared meals. But today I am trying this one because I just bought a Dutch oven. My local Calimax (yeah I'm living in Mexico because the rent here is much cheaper than anywhere in America) didn't have all the things you said I would need so I substituted a few things. For beans I am using Frijoles enteros Negros (which I hope is black beans) and for tomato paste it's gonna be tomato sauce
as well as salsa de chiles adobados. (adobos?) here's to it coming out right.
Quick update: came out a little spicy but pretty good over all. Made my house smell wonderful.
