Real Mexican tacos
Beef
Corn tortillas
Lard (or choice of oil)
Topping- cilantro, white onions, Salsa Roja, and lime
Sides- delicious sautéed onions, cucumber, red radish, and a soda or agua fresca
Ingredients
1 1/2 to 2 cups of water
4 lbs of chuck roast
1/4 onion
2 garlic cloves
2 bay leaves
1 tsp Mexican oregano
1 tsp black pepper
2 chiles guajillos
1 tsp salt chicken boullion
*pressure cook for 18 minutes (slow release)
Easy Salsa roja ingredients
6 tomatoes
6 chiles de arbol
3 garlic cloves
1/2 Tbsp salt
*If you want to keep this recipe authentic, you have to add a lot of chiles, but please make it comfortable for your home

Lard is healthier than any other choice! Good enough for our ancestors...good enough for me!
Well our ancestors only lived to be 40 years old and now we live to be 80 on average so modern medicine, sanitation, better cooking and safer food preparation has helped us out tremendously.
