I Found The Best Way To Preserve Potatoes

- I tried all the methods to preserve and store. I failed many times. In my research and attempts I have discovered that there are three ways that I have found to be the most effective for preserving potatoes long term for the home cook: Freezing potatoes, dehydrating potatoes, and pressure canning potatoes. I will share these with you and I’ll confess my past mistakes. Because we all learn from mistakes, right? I'll also show you a fast and easy recipe for using your potato peels so nothing goes to waste.

As a univ student, you may want to just do the mashed potato dehydrating - and place them in a pan of water, stir to boiling, and it is the consistency you want.
Never thought about making fried potato skins in the air fryer. I'll have to try that :)
i'm so happy to see you teaching the real and safe ways to preserve potatoes. I do grow my own and can most of them up each year....I did read in the Fox Fire books one older gardener who said she would dig up the potato, skin it and then use the potato for whatever and then she's rebury the skins where she had dug up the same potatoes....she had a long long row of them, by the time she got to the end of the row then the beginning of the row had potatoes for her to eat! I'm sure she was using a paring knife so there was more potato meat on those skins...I think I'll give it a try this year. I just had a nice baked potato for dinner last night for dinner.....just the potato and toppings, it was wonderfl! Of course I do love eating the skin so that might be a problem...hmmmm
Thanks for these tips. Question: when you dig your potatoes, if they are for freezing, do you cure them before prepping for freezing?
In most of the world, outside of America, our real and safe way of canning potatoes is water bathing. 99% of us don't have a pressure canner. And... gosh... we even water bath meat. Shocker! (Just like Americans did before pressure canners became a thing, and the FDA told you not to water bath most stuff).
We're all still alive. It's a miracle!
Remember to find out your altitude! I'm at 8500 ft in the Rockies. Water bath isn't practical for anything. It would take over 12 hrs. and still be iffy. So although your sister in Seattle or cousin in Maryland cans for 40 minutes in the pressure canner, in Denver or Salt Lake City you will have a longer time. You can usually find it under "High Altitude Canning" in your canner instructions.

I totally agree with everything you said about potatoes. I have them canned, dehydrated, and freeze dried in different shapes, but have not thought about freezing them. But I do love mashed that have been frozen so they will be next. Thanks!

Good job on video. Thanks for mentioning that not everyone does not have a basement or cellar or can afford a freeze dryer and that you need to follow safe methods of canning.
I found a recipe for tater tots and, yes, it was a lot of work. I froze them (made it easier to cut when ready to cook), and man, was it ever worth it. Also formed and froze some hash brown patties (won't use garlic powder again, will opt for onion) and they were great. I love your idea about the skins. I could probably talk my husband into making a full meal out of them. Thank.
I will cook a bunch of potatoes in my Instapot.I make mashed potatoe and put them in a oil sprayed muffin pan.When they are frozen I put them in a freezer bag.

So true, always have potatoes go bad before using all since buying in bulk. Love all the different ways you showed us how to preserve them. Never thought of freezing. Do add an apple in my potato bin, which seems to help them from ripping to quite.

I put my potato peelings in the blender, with a little water, and make a fertilizer for my geraniums. They love it, and do grow faster, with bigger and brighter blooms!

I dehydrated 50 lbs of russet potatoes. They turned out great. So beautifully white. I blanched the mall cubes for 8 minutes, the larger cubes for 10 minutes. For hashbrowns I blanched the whole potato for 25 minutes and then shredded into hash browns. All were peeled. I was very happy with the results. They are beautiful.

The potato issue I'm working on is way too many dried mashed potatoes. I want to find a way to make potato chips out of them. I don't eat Pringles due to something in them I'm allergic to but I used to like them. I think they are the only chip that starts as dehydrated potatoes.. I also would love to know how to make the wonderful extruded fries like A&W Rootbeer used to make. Let the search begin.
The potato water can be used as a soup/stew base.

I just started pressure canning YESTERDAY, and potatoes are on my list to try next. It's helpful to know that russets aren't the way to go when canning. I prefer golds and reds anyways, unless, of course, it's a crispy, loaded baked potato. 😄 👍🏻

I'm glad I found this channel again. I have been subscribed for a long time. I recently had to get a new phone. And and a lot of my subscriptions weren't on it, So
I had to resubscribe. As far as freezing potatoes. I make baked potatoes When they are done I slipped them on the top wrap and foil and freeze when I want one I take it out. Throw it in the oven when it's heated up. I uncovered it and let the skin crisp up.

Right on time. All my July harvested Potatoes have 3-foot-long vines. Time to process and put those guys away to get us through May and June. The Oct harvest will last us until then.
I put my cleaned potatoes peelings in a dirty bag with other different scraps which once its full of the different scraps we've collected, we then boil a whole chicken or two and then pull that out and strip the meat off the bones and then put the bones along with the stuff in the dirty and boil it slowly over night, strain it and then can the stock and chicken meat in a pressure canner. Under no circumstances do I want to freeze any, I much rather can or dehydrate them unless it will be for everyday use. Thank you for sharing this.

I best potatoes I have ever grown so far were from potato peels that I threw into my compost pile and let sit. They grew huge potatoes! Lol
You can freeze baked potatoes. Just bulk bake them, cool completely, and freeze. They should be good for around 3 months, and if you have a vacuum sealer, they'll probably be good way longer!

What is the "dreaded black spot"? I had a jar of potatoes that were two years old, the potatoes looked fine but a black spot on top! And it still had it's vacuum!
I was referring to if you don't blanch enough time, the middle of your potato slices can turn black.

I have to laugh because I just finished canning 20 pounds of Yukon Gold potatoes. I used exactly the same method as you explain. And I wish I had seen this before I cooked and fed the potato peels to my chickens. Lol thank you

If your filling your jars up to the rib below the threads as demonstrated, you are not leaving 1" headspace. The rib is at 3/4" from the lip of the jar. May cause unwanted siphoning.

I often bake several Russet potatoes, make them into twice baked potatoes, and then freeze the stuffed potato halves.

It is not recommended. I do mine in chicken broth because I usually only use them in soups. I don't really like the taste of canned potatoes when compared to fresh.
We cook my grandmothers recipe of boiled potatoes with onions both chopped. Will onions change the processing time?

Did you know, YOU can FREEZE then Dehydrate, and you'll get a similar product to the Freeze Dryed ones...Discovered that purely by accident!

It does. The Univ Of Georgia site says hot pack only. I think boiling the dices for 2 minutes is a good way to remove excess starch.

I always eat the skins of baked potato too. I also eat cake and cookie batter with raw eggs. You have to pick your battles.
