    I am in Australia and have been cooking Turkey in my Weber Kettle for Christmas for many years. I came across this recipe for smoked turkey breast and have just cooked this for my family 2 days ago for Christmas. I used the exact recipes for the Brine, the Herb Butter and the separate Gravy. I smoked an 8lb full Turkey Buffe for approximately 3 hours to get it up to the finished temperature. Without doubt, this was the juiciest and most flavoursome Turkey I have ever eaten. I will be using this exact recipe each Christmas from now on.

    Was the turkey organic or was it packaged with salt and sugar?

    How much water did you start with? I don't want to dilute the solution too much? 😊

      At 2:52 one cup sugar, one cup salt in 4 cups water. Later, add 12 cups ice that will melt in the brine. One cooled, turkey can be added for brining.

    If only my butcher box order that was billed on SUNDAY NOVEMBER 14th! was shipped... that's right- NOT EVEN SHIPPED yet. STILL processing. I have chatted with Customer service 2 days in a row and am getting the same runaround... you will have your box by Thanksgiving... I can't thaw and prep a turkey or roast that quickly. I even moved up my billing date so that my box would arrive THIS week... and it hasn't even SHIPPED YET. So frustrated and disappointed right now.

      @@candie1230 nope. I have continued my subscription and until this month's order- all has been on schedule. I am currently having deja vu with this shipment- it showed shipped, then on the truck for delivery... for 3 days in a row but not delivered... and then ! it showed that it was delivered... except IT WASN'T :-( . at least NOT to MY front doorstep :-( Drove around the neighborhood to see if I could find it on the wrong doorstep but no such luck. Contacted Butcher Box and they asked me to contact the courier directly and gave me a number to call- BUT they were closed by the time I called on Saturday ( yesterday ) AND it would have been FIVE days or more since the initial shipping notice so EVEN if I found the box, everything would probably be thawed and unsafe for consumption... disappointed. I contacted again to let them know that I could not touch base with the courier and they arranged for the box to be reshipped- by the same courier... Guess I will see. They really are quite responsive with customer concerns BUT I still don't have my box yet. Mixed feelings...
