  • Pasta Cacio e pepe (pasta with cheese and pepper)
    1) Boil water adding a teaspoon of salt.
    2) Start cooking pasta according to directions.
    3) Grind about 1-2 teaspoons of black peppercorns into a pan and saute for 2 minutes (no oil or butter). Set aside until pasta is cooked.
    4) Add pasta to the peppercorns.
    5) Add about 1/3 cup of the pasta water
    6) Add about 3/4 cup of grated parmesan cheese
    7) Stir to mix and fully coat the pasta.
    8) If sauce is too watery, add more cheese. If sauce is too thick, add more pasta water.
    9) Plate the pasta. Top with more parmesan if desired.
