Sometimes for me it works counter intuitively. I get a little more signal inside the enclosed room (even 5g) but the signal gets weaker in an open hall space.

You can check exact signal strength of diff place even within a room by going into about device > status > sim card status here u can see signal strength higher the asu number higher the signal strength and some mobile signal strength get weaker by holding ur mobile right on the signal antenna for example holding it in landscape while watching vdo our hands cover the antenna and signal will get weak

I found it interesting that my friend had better connectivity with the internet than me despite the fact that both were using the same network provider. But he was using an iphone and I had Xiaomi. There might be some other factors affecting this but still can you state a reason for this?

In your case, generally smartphones chips also need to have modems in order to provide the data connection in simple terms. As you have mentioned your friend is using an iPhone, the question itself has its answer because generally smartphones which are costlier should be having a very good quality modem than the normal price range smartphones. So it's simple iPhone's modem is more powerful than your smartphone's modem to provide a better internet connectivity. I think you might got some knowledge about it.

Internet providers may be able to send faster data but is your device capable of receiving every data that was sent is the question.
If you notice generally laptop/pc have large throughput compared to mobile, so if you do a internet speed test with the same wifi network, you will see the live proof. *Try experimenting with this...*

Same issue in my home. Main router is installed in first floor. Near the router that means in first floor net is good but ground floor it is too bad. So to connect to firestick in ground floor used the wds tech by connecting two routers. In down with a new child router net is connecting. But one issue with the child router the apps like sony liv and sun nxt is still loading if i connect with main router then only it is working both in firestick and mobile. Not sure what is the issue.
Tried a modem as a repeater but it is not working to login to firestick and it is a issue to login. Through i can connect to two different wifi's but firestick only not loading for apps like sony liv and sun nxt. But it is loading for disney+hostar, netflix and zee5. Cant find the issue where it is occuring.
If i connect firestick with base router it is too slow and buffering up
