      ​@@landonbrowne6250this is because you are the highest authority in the world who can decide what is or is not the best cuisine. then you mention the Florentine one, which in fact is famous only for a beef steak and a vegetable soup with bread. don't get me wrong, i know there is much more in tuscany and i don't mind their specialties, florence certainly has something else that is beautiful.

    Mark Felice you are a life saver! I have seen so many pictures/videos of European places/cities with no one walking the streets in the news- completely EMPTY, void of human traffic. It is so stark and sad. Then I get your video, and remember how it used to be, and will be once again.
    This is one of my favorite videos, it is "comfortable" there, you look relaxed and very happy to be around everyone, eating snacks and having some wine :) It is exactly what I love about being in Europe. I love the way you are able to draw out people who can tell you about the foods, meats and pastas, desserts... My grandmother was about the size of the woman making yellow pasta :)
    Thank you for a needed break from the isolation we are experiencing as I shelter in place... PS my dh just turned 70, he is wearing "your shirt" and he looks great in it (we love the "V" neck)!

    Thanks for sharing this! I am from Bologna I miss it a lot. It was good to see your video, waiting to go back there again! A good "tagliere misto" with tigelle or crescentine (kind of fried bread) and a glass sangiovese is the best meal you can get in Bologna.

    The thing your weren't able to identify in the platter at 10:10 is called "cicciolata". And it's a typical product of the city of Parma. It's made from the cooking of the lardello (back’s fat) and from the pig’s deboned head, mixing in smaller amounts of other parts, such as heart, tongue etc. It is seasoned with salt, spices, wine, garlic and then squeezed with a press, so to get rid of the excess fat.

    We took a day trip from Florence to Bologna early Dec 19... we had some cheese , cured meats & wine @ Tamburini
    We had Tortellini in Brodo @ Sfoglia Rina which is my fav pasta.. not easy to find this type of pasta

    This was a wonderful trip to the earth of Italy ♡ I love your format, the beautiful landscapes, the quality and passion you delivery in each one of your videos. I know how hard it is as an English native speaker it is hard to pronounce some foreign words. I watched almost all of your videos and I would like to give you a couple suggestions for the pronounces of some Italian words.
    In particular:
    Spaghetti --> NOT Spagheddi
    Tagliatelle --> NOT Tagliatelli (not the I of spaghetti)
    Bologna --> NOT Boloni (it ends with a and not with i)
    Bolognese --> NOT Bolonisi
    Please do not take the suggestions as a critic of your superb work, but as suggestions to improve your already epic level ;)
    I hope to watch more videos from you soon!

    Another great video! I was in Bologna a few years ago, and obviously didn’t get around enough. Lucio Dalla had just died, and my AirBnB host took me by his apartment off the main square while we were out for a walk. It’s an unfortunate little thing about my/our upbringing that I always associate the word Bologna with a cheap, nasty lunch meat, which doesn’t do the city justice.

    Breathtaking filming of my adopted city. I’m a little frustrated though by some of the incorrect things. Examples: tortelloni filling is not ricotta and parsley but ricotta and spinach; piadina fritta is definitely not a bolognese specialty, just something made up for tourists. Piadina is typical of Romagna. Also, I’m glad you enjoyed your porchetta, but I believe that is typically Roman. And tigelle? Modena. Mercato dì mezzo is actually one of Bologna’s newest markets. The building was abandoned for decades before opening up a few years ago. Drop me a line if you come back to Bologna, I’ll find you a better guide ;-)

    I love great food, but I have given up the animal products like these here, because it represents such terrible suffering for the animals. They are sentient and each animal wants to live. Seeing this deli makes me sad.

    First of all you do not put a mandolin and accordion music to introduce Bologna......geographically wrong and depressing for any Bolognese

    True tortellini can be find ONLY in Bologna, all the others are low quality imitations.

      Si, dai anche a modena, da bolognese non posso ammettere che anche i nostri vicini li sanno fare, sono anche loro dopotutto.
