Currant Pie - a Plot to Plate Recipe - SO SIMPLE!

- This started out as a blackcurrant pie but I added so many redcurrants that it became a "Mixed Berry Pie".
So simple to make - give it a go.
INGREDIENTS
Currants - enough to fill your pie dish
Sugar, granulated or caster - half the weight of the currants
Ready rolled shortcrust pastry - 2 packs (or one each shortcrust and puff if you want a puff pastry lid)
Eggwash
METHOD
Strip and clean the currants
Grease the pie dish
Line the pie dish with one sheet of shortcrust pastry and trim
Add the currants
Add the sugar - remember, half the weight of the currants
Cover the dish with the second sheet of pastry
Trim the lid and crimp the edge onto the base
Pierce three holes in the lid to allow the steam to escape
Brush the lid with the eggwash (I used whole egg and milk)
Bake at 180-200°C for 20-25 minutes or until the lid is golden and the juices are oozing out of the vent slits
Enjoy hot or cold with custard, ice cream or whatever takes your fancy!

Great looking pie Steve made my mouth water, a drop of custard wouldnt go amiss.
So good, and yes, it was custard for me later on LOL
Steve, as you may know, currants were outlawed in many US states in the mistaken belief that the state plants were a vector for pine rust. That makes it difficult to obtain the fresh fruit. That good side is that your recipe works for wild blueberries and other fruits. Thanks for the show and a nudge to make me look for wild berries here. Take care friend!

Looks delicious and I bet it tastes amazing. I remember my nana baking and she could flip round the trays and trim the over pastry. I recall that every time we went to Orlando, ice cream was always the preferred topping for the (numerous) pies with my kids LOL

Delicious, I used some blackcurrents on a cheesecake at the weekend it was beautiful.
I tend to make a lot of jams but was a nice change.

Looks lovely but I don’t like soggy bottoms!!!!! My blackcurrants were rubbish again so they are getting the chop - got some new bushes cultivating so hopefully might get better crop next year or year after 😊
I'd normally blind bake but this recipe was all about speed and simplicity. Actually, the juices soaked into the base a lot so it wasn't the classic soggy bottom, if you get my drift.
try using a fork to remove the currants from the strigs....................brian
Good idea! I only had a few strigs this time as they were the ones I picked with care for the show. With the other currants in the bowl, I used my fingers as a comb up on the plot. Lovely coloured hands LOL
