Everyone needs a good carrot cake recipe, and this is all you'll ever need. This raw carrot cake is delicious! Maybe it’s the sweet moist cinnamon-spiced cake. Or the tangy cream cheese frosting. Or the bit of savoriness that comes from the nuts and helps the spices balance all that sweetness.
Whatever it is, this raw carrot cake is very similar in taste and texture to the baked version. However, unlike the real deal carrot cake, this recipe is vegan (dairy-free, egg-free), grain-free (gluten-free), soy-free, and refined sugar-free.
This recipe utilizes a natural sweetness of carrots and dates, a flour-like texture of ground coconut, and cream-like consistency of blended cashews. You'll need just a small slice to feel full for quite some time. It's the type of cake that will satisfy your sweet tooth but also serve your body because it's made of real, nutrient-dense food.
If you think that layered cakes are too much work, you can easily turn this carrot cake into a simple cake with icing just on the top.

That layered cake gave me an idea of making a raw rainbow cake. The same dough is used but with a different vegetable;
Red layer: beetroot instead of carrot;
Orange layer: carrot;
Yellow layer: pineapple instead of carrot;
Green layer: avocado in the place of carrot;
Blue layer: blue spirulina ; and
Violet layer: blueberry.

Sounds fab.👍 I hv tried colouring cashew cream many times. Beet works fine with it.
Try dried rose leaves it gives such an amazing subtle flavor with Awsome color.
Or use fresh rose grind with sugar (white) u get this flavored sugar with colour use that as sprinkle or garnish its an absolute rocker.👍💚✌️

!!!Thank you!!! My mother used to make homemade carrot cake when I was a kid. I loved it, and she loved that I loved it because I was a finicky eater...and she didn’t make it really sweet. Recently, before the epidemic, my husband and I stopped at a coffee house where they had gluten-free, dairy-free raw slices of carrot cake. It was huge, expensive, and delicious. I ate a few bites and was satiated because it was so rich. I ate that cake for days a few bites at a time. My hubby said that he was going to buy me a slice when my birthday came around, but everything was shut down during the pandemic. So after things started opening up again, he went to buy a slice to surprise me...but they no longer have it. 🧐🙄😞. So I need to try making this. I have had a hankering for it lately.

A traditional Swiss carrot cake uses hazelnuts. And, typically the cake improves its flavor over a day or two of sitting in the fridge.
I think that's true of many cakes. But waiting a day to slice.......so difficult!

Question: if I have a 7" cake pan, what ingredient measurements should I do to adjust to that capacity while aiming for a multiplayer cake?
I noticed your printable recipes allow to adjust for serving size by slices, and your basic recipe here is set to a 12 slice for the 6" pan multilayered cake or a single layer 9" pan. Would you increase slice count to 14 to adjust for a 7" cake pan?

I was wondering if you could do a video on a recipe for black bean veggie burgers. My husband and I love them. We have been buying a brand called, "Morning Star". We read the ingredient list and was shocked at what we found...a lot of preservatives and other thing I can't even pronounce. I love your videos and I know you would have a great tasting recipe for black bean veggie burgers. P.S. We have stopped eating meat, but we still eat some dairy products, like eggs, cheese and Greek yogurt. A recipe for homemade Greek yogurt would be great, too!

Hi Mark - yes, you can. However, I would use a thick (solid) coconut cream (the one I used was quite liquid-y) and I would also increase the amount of cashews slightly, so the frosting is thicker (say, 2 1/2 cups cashews to 1/2 cup coconut cream).
