  • Low Carb/Keto Chocolate Peanut Butter Cookies by The Keto Kitchen.
My original peanut butter cookie recipe is one of the highest viewed video on the channel
    ( • Peanut Butter Cookies ... )
I thought it would be rude of me to not share the chocolate version!
If you like coco pops then you will LOVE these! They are not overly chocolatey and they taste just like the breakfast cereal!
    | The Recipe |
    INGREDIENTS:
    - 1 cup (250g) Peanut Butter (as low in sugar as you can find or you can make your own! I use Asda's own Crunchy Peanut Butter)
    - 1/2 cup Sweetener, granulated (I used Erythritol)
    - 1 large Egg
    - 1 & 1/2 tsp Vanilla Extract (I use French Vanilla from DaVinci's Sugar Free Syrup)
    - 1 tsp Baking Powder
    - 1/4 cup (21g) Cocoa Powder (I use Bourneville)
    METHOD:
    - Preheat oven to 190C/375F
    - In a large mixing bowl add peanut butter and melt the peanut butter in the microwave for 30 seconds until soft (but not liquified) before continuing (you don't have to, but it helps mix a lot)
    - Add sweetener and egg. Mix until all ingredients are combined.
    - To the mixture, add syrup/extract, baking powder and cocoa powder.
    - Mix until all ingredients are well combined.
    - Line a baking sheet with a silicone sheet or greaseproof paper.
    - Roll dough between your hands and form into 12 balls, place on baking sheet and press down slightly for a flatter cookie.
    - Bake for 10 - 12 minutes
(I suggest checking your cookies at 10 minutes with a gentle press. If they are still very soft, leave them in for a few more minutes)
    - Remove from oven and leave to cool.
IF YOU DO NOT LEAVE THE COOKIES TO COOL COMPLETELY THEY WILL FALL APART!
    MACROS:
    Makes 12 cookies.
    Per cookie:
    CALORIES: 80kcal
    FAT: 6g
    PROTEIN: 3g.
    NET CARBS: 2.4g.

Hi I have a slight suggestion to the cookies. You can use powdered sugar substitute. If you don't have powdered sugar substitute you can grind sugar substitute and cornstarch together in a food processor or blender. It makes the cookie have that nice texture those classic peanut butter cookies have.

Thank you so much! I have plans to talk about lots of little things about keto - whether that's stuff I noticed only after starting keto, things I was never told I wish I knew and other general things about keto that aren't really talked about - that will all start once I get through my keto guide which should be finished sort of part of the way through 2019 (don't quote me on that!) :)

Can we use Stevia as a sweetner?

Great recipe! I made these tonight and right away I had one after it's done! I had to make a bit of adjustments to it (since I don't like my cookies too sweet..even with the sweetener). Btw...that sweetener is probably not 11.5 grams (for 1/2 cup)...seems a little light...maybe more like 100 grams? Looking at the picture looks like quote a bit of sweetener for just 11.5 grams.

Hiya, I've stopped doing gram measurements on my channel due to this exact comment - the weight of the sweetener will heavily depend on the sweetener you use. Back then, when I used to use Splenda, it was 11.5g for 1/2 cup - but now, for example, I use Erythritol which is about 75g for 1/2 a cup

@@TheKetoKitchen Wow...that's crazy 60 grams difference! Oh well, I'm using erythritol/stevia mix...and glad I started with 1/4 cup first...it was really sweet! But nevertheless it turned out great considering my first trial with the recipe and I shall keep fine tuning it! Thanks again!

    80kcal per cookie??

      Yep!

Nope. They're way higher than 80 calories per cookie. One cup of peanut butter alone is 1600 calories. Divide that by 12 cookies and you're already at 133 calories per cookie....and that only accounts for the peanut butter!
